Cuando hice esta receta por «instinto», no esperaba que estuviera tan buena. Después de mi receta clásica de tiramisú, os presento este tiramisú de frambuesa, que no se parece mucho a un tiramisú de verdad, ya que su sabor es muy diferente. Una crema perfectamente suave y con un potente sabor a vainilla, envuelve y realza la frescura y la suave textura de las frambuesas frescas. Todo ello sobre galletas de cuchara empapadas en coulis de frambuesa con brandy de frambuesa… Un verdadero pecado, ¡pero que se come a sí mismo! ¡Volveré a hacer este tiramisú pronto y haré nuevas fotos…!
Receta de Tiramisú de Frambuesa para 8 personas:
-500g de frambuesas frescas (¡absolutamente!) -750 g de mascarpone -3 huevos grandes -120g de azúcar -30g de azúcar glas -1+1/2 vainas de vainilla -200g decoulis de frambuesa fresco o congelado -100g de agua + 30g de azúcar -50ml de brandy de frambuesa -250g de bizcocho -polvo de oro o azúcar glas
Poner el coulis de frambuesa (ver receta aquí) en un bol con los 100g de agua (más o menos para que el coulis pueda empapar suficientemente las galletas con una cuchara) y los 30g de azúcar.
Añadir el brandy de frambuesa.
Remover el coulis para disolver el azúcar y reservar.
Separar las claras de las yemas. Poner las yemas con los 120g de azúcar y batir al máximo con una batidora eléctrica.
Abrir las vainas de vainilla y raspar la vainillina con el pulgar, luego añadirla a la mezcla «yemas+azúcar».
Añadir el mascarpone en tres veces, batiendo para incorporarlo y airearlo.
Cuanto más se bate, más se airea el mascarpone y adquiere una consistencia ligera e incomparable.
Montar las claras a punto de nieve con un chorrito de zumo de limón o una pizca de cremor tártaro.
Añadir el azúcar glas y mezclar con las claras de huevo.
Añadir las claras de huevo batidas a punto de nieve a la mezcla de mascarpone y vainilla.
Mezclar mientras se levanta, para no hacer caer las claras.
Sumergir las galletas en el coulis de brandy de frambuesa. Empápalos bien en el coulis.
Colocar los bizcochos bien juntos en una fuente de gratinar o en el plato de presentación elegido .
Añadir la mitad de la crema de mascarpone.
Extender bien y luego poner la mitad de las frambuesas sobre la crema.
Presionar ligeramente las frambuesas en la crema con la palma de la mano.
Verter la otra mitad de la crema.
A continuación, coloque las frambuesas sobre el tiramisú al gusto.
Poner en la nevera durante al menos 3 horas antes de comer.
¡El tiramisú es cremoso y va perfectamente con las frambuesas frescas!
