بجعل هذه الوصفة على “غريزة” ، أنا كان متوقعا ليس هذا على ما يرام! بعد وصفة التيراميسو الكلاسيكية ، أقدم لكم هذا التوت الذي لم يعد يشبه التيراميسو الحقيقي ، لأن نكهته مختلفة تمامًا. كريم مثالي دسم و كريمي بنكهة الفانيليا القوية ، يكسو ويبرز النضارة والملمس الناعم لتوت العليق الطازج! كل شيء على ملعقة من البسكويت المنقوع في كوليس التوت مع براندي التوت … خطيئة حقيقية ، لكنها خطيئة تأكل نفسها! سأجعل هذا التيراميسو مرة أخرى قريبًا من خلال التقاط صور جديدة …!
وصفة توت العليق تيراميسو لـ 8 أشخاص:
– 500 جرام من توت العليق الطازج (ضروري !!) -750 جرام مسكربون – 3 بيضات كبيرة – 120 جرام سكر – 30 جم سكر بودرة -1 + 1/2 قرون فانيليا – 200 جرام من كوليسالتوتطازجة أو مجمدة – 100 جرام ماء + 30 جرام سكر -50 مل براندي توت العليق -250 جرام من أصابع السيدة – مسحوق الذهب أو السكر البودرة
ضع كوليس التوت (انظر الوصفة هنا ) في وعاء به 100 جرام من الماء (أكثر أو أقل حتى يمكن نقع هذا الكولي كافي ملعقة بسكويت) و 30 جرام سكر.
أضف براندي التوت.
اخلطي الكولي ليذوب السكر ثم اتركيه جانبًا.
افصل البياض عن الصفار. نضع الصفار مع 120 جم من السكر ويقلب قدر الإمكان بالمضرب الكهربائي.
افتح حبات الفانيليا واكشط الفانيلين بإبهامك ، ثم أضفه إلى مزيج “صفار + سكر”.
أضيفي الماسكاربوني على ثلاث دفعات مع الخفق لدمجها وتهويتها.
كلما خربنا أكثر ، كلما زاد عدد المسكربون يتنفس ويأخذ اتساقًا خفيفًا لا يضاهى.
يُخفق بياض البيض حتى يتجمد مع رشة من عصير الليمون أو طرف سكين من كريمة التارتار.
نضيف السكر البودرة ونعصر البياض.
يُضاف بياض البيض المخفوق إلى مزيج الفانيليا المسكربون.
تخلط أثناء الرفع حتى لا يتساقط بياض البيض.
اغمس أصابع السيدة في كوليس التوت البراندي. انقعهم جيدًا مع هذا الكولي.
ضع البسكويت بإحكام في مخطط جراتان أو في الطبق المحدد من العرض.
أضف نصف كريم الماسكاربوني.
انتشر جيداً ثم ضعي نصف حبات التوت على الكريمة.
اضغط برفق براحة يدك للضغط على التوت في الكريمة.
اسكب النصف الآخر من الكريم.
ثم ضعي التوت فوق التيراميسو حسب الرغبة.
ضع 3 ساعات على الأقل في الثلاجة قبل التهامها!
تيراميسو كريمي إلى الكمال ويتناسب تمامًا مع التوت الطازج!
