He aquí una nueva receta de mis queridas amigas Myriam, Lalla Fatima y Touria. Hicimos esta receta el pasado mes de mayo durante mi viaje culinario a Casablanca y Rabat (¡vea el viaje culinario AQUÍ!). Una deliciosa receta marroquí que se puede utilizar como guarnición del cuscús. Hay incluso un cuscús hecho sólo de sémola y tfaya (cuscús tfaya). No puedo ni empezar a decir lo increíble que huele esta receta de cebolla caramelizada con pasas y canela. Una auténtica delicia y una verdadera tortura si intentas resistirte a ella. ¡Porque te puedes imaginar acompañándolo con otros platos!
Receta para tfaya:
-1-1,2kg de cebollas blancas
-3 palitos de canela
-sal, pimienta negra
-1 pastilla de azafrán (o unos cuantos pistilos de azafrán o falso azafrán en polvo)
-50g de mantequilla
-3 cucharadas de aceite
-50 a 100 g de pasas rubias (al gusto)
-1 cucharada de canela en polvo (no abultada)
-4 cucharadas grandes de azúcar
Pelar las cebollas y cortarlas en tiras.
Ponerlos en una cacerola grande a fuego moderado.
Añadir la mantequilla, el aceite, la canela en rama, la sal, la pimienta y la pastilla de azafrán.
Remover bien y cocinar, removiendo de vez en cuando para que las cebollas no se quemen.
Cuando las cebollas estén cocidas (blandas al tacto), añadir las pasas y la canela en polvo.
Añadir el azúcar glas y aumentar el fuego.
Sin dejar de remover, deje que el azúcar se caramelice ligeramente.
Todo el agua de las cebollas debe evaporarse y la grasa debe volver a freír y caramelizar las cebollas.
Está listo cuando no hay ningún líquido, pero sí una buena grasa. Luego hay que adaptarlo a tu gusto. ¡Me encantaba cuando las cebollas estaban bien caramelizadas y se volvían translúcidas de grasa!
