Aqui está uma nova receita dos meus queridos amigos Myriam, Lalla Fatima e Touria! Fizemos esta receita em Maio passado durante a minha viagem culinária a Casablanca e Rabat (ver a viagem culinária AQUI!). Uma deliciosa receita marroquina que pode ser utilizada como acompanhamento para o cuscuz. Existe mesmo um cuscuz feito apenas de sêmola e tfaya (tfaya couscous). Não consigo sequer começar a dizer-vos como esta receita de cebola caramelizada de passas de canela cheira incrivelmente bem. Um verdadeiro deleite e uma verdadeira tortura se se tentar resistir a isso! Porque pode imaginar acompanhá-lo com outros pratos!
Receita para tfaya:
-1-1,2kg de cebola branca
-3 canelas em pau de canela
-sal, pimenta preta
-1 cubo de açafrão (ou alguns pistilos de açafrão ou pó de açafrão falso)
-50g de manteiga
-3 colheres de sopa de óleo
-50 a 100g de sultanas louras (a gosto)
-1 colher de sopa de canela em pó (não saliente)
-4 colheres de sopa grandes de açúcar
Descascar as cebolas e cortá-las em tiras.
Colocá-los numa grande panela em calor moderado.
Adicionar a manteiga, óleo, pauzinhos de canela, sal, pimenta e cubo de açafrão.
Mexer bem e cozinhar, mexendo ocasionalmente para que as cebolas não ardam.
Quando as cebolas forem cozidas (macias ao toque), adicionar as passas e o pó de canela.
Adicionar o açúcar de rícino e aumentar o calor.
Enquanto se mexe constantemente, permitir que o açúcar caramelize ligeiramente.
Toda a água das cebolas deve evaporar e a gordura deve voltar a fritar e caramelizar as cebolas.
Está pronto quando não há líquido nenhum além de boa gordura! Depois tem de o adaptar ao seu próprio gosto! Adorei quando as cebolas estavam bem caramelizadas e as cebolas se tornaram translúcidas com gordura!
