Me había sobrado un poco de crema de castañas de mi receta de tarta de castañas ultra (receta AQUÍ) y quería darle una última oportunidad para conseguir unos pastelitos muy fundentes y ricos que supieran muy bien frescos. Esta nueva receta hace precisamente eso. No hay harina de trigo, sino sólo un poco de harina de castaña, lo que la convierte en una receta sin gluten. Lo prometo, ¡ésta es la última castaña antes del próximo invierno!
Receta para tartas de fondant:
250 g de crema de castañas
2 huevos
80g de mantequilla
40 g de harina de castañas
2g de polvo de hornear
3g de sal
20g de azúcar
Mezclar los huevos y la crema de castañas como si fuera una tortilla.
Añadir la mantequilla derretida.
Añadir la sal, la levadura y la harina de castañas.
Un poco de azúcar y la masa está lista.
Verter la masa en moldes pequeños. Para este tipo de recetas, los moldes de silicona son perfectos. Lo principal es no sobrepasar los 3/4 de la altura del molde elegido.
Si la masa parece grumosa en esta etapa, todo se une cuando se hornea…
Hornear a 170°C durante unos veinte minutos. Cuanto más grande sea el molde que elijas, más tiempo tardará en hornearse. Esta vez he preferido hornear mis tartas en moldes para mini tartas.
Desmoldar, dejar enfriar y servir en frío. Para disfrutar rápidamente.
