Habrás notado que estoy publicando un poco menos de lo habitual. Hay varias razones para ello. En primer lugar, el nuevo diseño del blog ha requerido algunos ajustes (habrá más). También estoy trabajando en mi nuevo libro, del que hablaré pronto. Y lo más importante: estoy trabajando en mi proyecto de taller que me permitirá hacer más recetas en el blog y finalmente cursos más variados y regulares. ¡Me acabo de apuntar a un sitio que espero que guste mucho y donde pueda hacer muchos experimentos culinarios! Así que te propongo una receta rápida y fácil. Quería una oda al azúcar y a la mantequilla salada (sin la música). Pero también quería encontrar el sabor del sirope de oro, un ingrediente que es muy fácil de encontrar hoy en día. Este pastel es deliberadamente dulce y rico. Con azúcar de caña y mantequilla medio salada, tiene una cualidad reconfortante para mí. Se puede quitar parte del azúcar, pero esto es lo que yo quería: una tarta que parece de caramelo…
Receta para un pastel dorado de 13 cm:
70g de azúcar de caña
75g de mantequilla salada
dos buenas pizcas de sal
130 g de jarabe de oro
130 g de harina
1/8 de cucharadita de levadura en polvo (una buena punta de cuchillo)
1 huevo
Yo hago mi pastel aquí en un molde muy pequeño ya que es bastante rico. Siéntase libre de duplicar las proporciones para un molde normal.
Poner el azúcar de caña, la mantequilla salada, la sal y el sirope de oro en un cazo a fuego lento.
Llevar a ebullición, luego dejar enfriar fuera del fuego para que el azúcar tenga tiempo de derretirse.
Mezclar la harina y la levadura en polvo. Verter el líquido sin dejar de remover.
Añadir el huevo y mezclar de nuevo.
Verter en un molde forrado con papel de horno.
Hornear durante 30 minutos a 170°C. Ajusta el tiempo de cocción a tu horno, debe estar dorado y no tambalearse demasiado en el centro. La consistencia es muy sorprendente y se hincha mucho.
