Deve ter reparado que estou a afixar um pouco menos do que o habitual. Há várias razões para isto. Antes de mais, houve o novo design do blogue que exigiu alguns ajustes (haverá mais). Também estou a trabalhar no meu novo livro, sobre o qual falarei em breve! E o mais importante: estou a trabalhar no meu projecto de oficina que me permitirá fazer mais receitas no blogue e, finalmente, cursos mais variados e regulares. Acabei de me inscrever num lugar que espero que me agrade muito e onde possa fazer muitas experiências culinárias! Por isso, proponho uma receita rápida e fácil. Eu queria uma ode ao açúcar e manteiga salgada (sem a música). Mas também queria encontrar o sabor do xarope dourado, um ingrediente que é muito fácil de encontrar hoje em dia. Este bolo é deliberadamente doce e rico. Com açúcar de cana e manteiga meio-sal, tem uma qualidade reconfortante para mim. Pode remover parte do açúcar, mas era isto que eu queria: um bolo que se parece com um bolo de caramelo…
Receita para um bolo de ouro de 13cm:
70g de açúcar de cana
75g de manteiga com sal
duas boas pitadas de sal
130g de xarope dourado
130g de farinha
1/8 colher de chá de fermento em pó (uma boa ponta de uma faca)
1 ovo
Faço aqui o meu bolo numa frigideira muito pequena, pois é bastante rico. Sinta-se à vontade para duplicar as proporções para um molde normal.
Colocar o açúcar de cana, manteiga salgada, sal e xarope dourado numa caçarola em lume brando.
Deixar ferver e depois deixar arrefecer para que o açúcar tenha tempo de derreter.
Misturar a farinha e o fermento em pó. Verter o líquido enquanto se mexe.
Acrescentar o ovo e misturar novamente.
Verter para um molde forrado com papel vegetal.
Cozer durante 30 minutos a 170°C. Ajuste o tempo de cozedura ao seu forno, deve ser castanho dourado e não oscilar demasiado no centro. A consistência é muito surpreendente e incha muito.
