Pero, ¿por qué ese nombre? Bueno, este pastel de naranja es… ¡nutritivo! ¡Pero lo más increíble es que las personas que lo probaron lo encontraron ligero…! Se trata de una pasta desmenuzada y crujiente, rellena de una crema de almendras y naranja, cubierta con una rica crema de naranja. Un verdadero pecado, ¡pero tan bueno! Doy aquí la receta de mi masa de tarta favorita particularmente que es perfecta para esta receta.
Receta de la tarta de naranja escandalosa (6 personas):
Pastelería dulce crujiente (apta para 2 tartas): -250g de harina -175g de mantequilla blanda -50g de huevo -65g de azúcar glas -1 pizca de sal -vainilla en polvo
Crema de almendra y naranja: -la cáscara de 2 naranjas sin tratar -90ml de zumo de naranja -2 huevos -100g de azúcar glas -75g de mantequilla blanda -85g de polvo de almendra
Crema de naranja: -1 huevo -1 yema de huevo -85g de azúcar -la cáscara de una naranja sin tratar -90ml de zumo de naranja -85g de mantequilla blanda -5g de harina de maíz
Empezar por preparar la pasta dulce crujiente mediante cremas. Poner el huevo, la mantequilla, el azúcar glas, la pizca de sal y la vainilla en polvo en el bol de la batidora.
Mezclar con la hoja (la «k» de la kitchenaid o kenwood) para obtener una crema, luego agregar la harina de una sola vez. Remover sólo para incorporarlo sin insistir.
Coloque la masa entre dos hojas de papel de horno y extiéndala con un rodillo fino.
Forrar un círculo de tarta de 20 cm x 2,5 cm.
Asegúrate de formar un ángulo recto dentro del círculo.
Poner la masa en un lugar fresco y pinchar el fondo con un tenedor. Precalentar el horno a 180°C.
Hacer una bolsa de harina, como se explica en la receta de las tartas de frambuesa.
Hornear durante 15-20 minutos, luego sacar del horno y quitar la bolsa de harina. Vuelva a meterlo en el horno durante 5 minutos.
el consejo de bernardoLa crema de naranja y almendra es muy húmeda, por lo que habrá que sellar la base de hojaldre. La única manera de hacerlo es poner una capa de clara de huevo encima y cocinar esta capa, que actuará como aislante.
Extender una fina capa de clara de huevo por toda la superficie interior de la base de hojaldre.
A continuación, hornear de nuevo durante 10-15 minutos. Esta foto es sólo del blanco horneado, hay que dejar que se cocine para que se dore el fondo de la masa. El tiempo de cocción depende, como siempre, de la potencia del horno.
Mientras tanto, preparar la crema de almendras y naranja. Poner en un bol la mantequilla blanda, el azúcar glas y la almendra en polvo.
Añadir la ralladura de las dos naranjas (¡sin tratar!).
Los huevos…
Y el zumo de naranja.
Mezclar bien. La crema seguramente hará grumos, ¡pero no importa! Cuando horneas, ¡todo cae en su lugar!
Verter sobre la base de hojaldre dorada.
Hornear de nuevo a 180°C durante 35-45 minutos. Hay que vigilarlo, pero la crema tiene que estar dorada igualmente, como una quiche…
Retirar de la sartén y enfriar sobre una rejilla.
A continuación, prepare la crema de naranja. Poner en un cazo el huevo, la yema, el azúcar, la harina de maíz, la ralladura de naranja y el zumo de naranja.
Cocinar suavemente a fuego lento, removiendo constantemente con un batidor. Cuando la crema hierva, retirar del fuego. Dejar enfriar y, cuando la crema esté a 50°C, añadir la mantequilla en trozos.
Mezclar bien para incorporar toda la mantequilla. Dejar enfriar durante 10 minutos y luego verter sobre la tarta.
Coloque la tarta en el frigorífico durante al menos 2 horas.
