Un sorbete increíblemente aromático, especialmente cuando se hace con excelentes fresas. ¿Mis favoritos? ¡Los de Plougastel! ¡Con los tuiles de almendra, este es para mí uno de los mejores postres de la historia! Aquí os doy la receta más sencilla, sin añadir trimolina ni otros estabilizadores de sorbetes.
Receta para 1 litro de «sorbete de fresa»:
-400g de fresas descascaradas
-300ml de azúcar de caña líquida (o jarabe a 30°B, ver receta más abajo)
-el zumo de medio limón
Para el jarabe Baumé 30°:
(suficiente para al menos 2 recetas):
675g de azúcar
500g de agua
25g de jarabe de glucosa
Llevar a ebullición el agua y el azúcar, añadir el jarabe de glucosa, volver a hervir, retirar del fuego y dejar enfriar.
Poner todos los ingredientes en una batidora.
Mezclar durante un buen minuto. ¡Está listo!
Poner en una turbina para helados o cualquier otra máquina de sorbetes.
Cuando la máquina se detenga, vierta el sorbete en un tarro y guárdelo en el congelador.
El consejo de Bernard: para obtener un sorbete de consistencia ideal, sin trimolina, preparo mi sorbete 3 horas antes de la hora prevista para el postre. Luego lo guardo en el congelador y en el último momento lo sirvo. ¡Sigue siendo tan suave como puede ser! Si el sorbete se hace con antelación, sácalo al menos 30 minutos antes de servirlo.
