Um sorbet incrivelmente perfumado, especialmente quando feito com morangos excelentes. Os meus favoritos? Os de Plougastel! Com tufos de amêndoa, esta é para mim uma das melhores sobremesas de sempre! Aqui dou-vos a receita mais simples, sem a adição de trimolina ou outros estabilizadores de sorbet.
Receita para 1 litro de “sorvete de morango”:
-400g morangos, descascados
-300ml de açúcar de cana líquido (ou xarope a 30°B, ver receita abaixo)
-o sumo de meio limão
Para o xarope Baumé a 30°:
(suficiente para pelo menos 2 receitas):
675g de açúcar
500g de água
25g de xarope de glucose
Levar a água e o açúcar a ferver, adicionar o xarope de glucose, voltar a ferver, retirar do calor e deixar arrefecer.
Colocar todos os ingredientes num liquidificador.
Misturar durante um bom minuto. Está pronto!
Colocar numa turbina para gelados ou qualquer outra máquina de sorvetes.
Quando a máquina parar, verter o sorvete para um frasco e armazenar no congelador.
O conselho de Bernard: para um sorbet de consistência ideal, sem trimolina, preparo o meu sorbet 3 horas antes da hora marcada para a sobremesa. Depois guardo-o no congelador e, no último momento, sirvo-o. Continua a ser tão suave quanto possível! Se o sorbet for feito com antecedência, retirá-lo pelo menos 30 minutos antes de servir.
