Con la vuelta del frío, me apetecía mucho entrar en calor con una deliciosa sopa de castañas. Siempre tengo un paquete de castañas en el congelador en caso de emergencia que me queda de la temporada festiva. Las ventajas de esta receta: su rapidez, su sabor, su lado chic por un precio muy modesto. Acompañado de finas lonchas de foie gras o de crujientes trozos de tocino, es perfecto para las ocasiones especiales. Aprovechemos por fin que el invierno ha vuelto con fuerza para un placer no tan culpable. (¡Aunque sigue siendo rico!)
Receta de sopa de castañas para 6 personas:
-1 cebolla -2 cucharadas de aceite de oliva -750 g de castañas congeladas o cocidas -500 ml de caldo de pollo -350ml de leche (o más según la consistencia deseada, que se ajustará al final de la cocción) 200 ml de nata entera (o 15% de nata baja en grasa) -sal pimienta -200 ml de nata montada para servir (opcional) -láminas de terrina de foie gras o trozos de tocino crujiente (opcional) -Cebollino picado
Cortar la cebolla en trozos (¡no importa la forma!). Calentar el aceite de oliva en una cacerola grande y añadir las cebollas.
Cocinar durante 2-3 minutos, removiendo y luego añadir las castañas . Aquí, tomé las castañas crudas congeladas de Picard que son perfectas. También puede utilizar castañas cocidas en tarros. En este caso, el tiempo de cocción será más corto.
Añadir los 500 ml de caldo de pollo.
Luego la leche. Añadir sal y pimienta al gusto.
Llevar a ebullición y luego bajar el fuego para cocinar a fuego lento durante 15-20 minutos (para las castañas crudas) o 10 minutos (para las castañas cocidas).
Al final del tiempo de cocción, sacar 6-7 castañas que hayan sobrevivido al proceso de cocción y que todavía estén bien.
Los utilizaremos para el servicio.
Triturar la sopa con una batidora de mano o en una licuadora.
Añadir la nata líquida.
Mezclar hasta obtener una buena consistencia aterciopelada. Para la consistencia, añadir un poco de leche si es necesario y ajustar el condimento .
Manténgase caliente. Justo antes de servir (esto es opcional, ya que está muy rico) monta la nata. Para ello, ponga la crema con el bol y las batidoras en la nevera durante una buena media hora.
Batir la mezcla hasta obtener una crema batida y añadir un poco de sal.
Cuando llegue a la mesa, sirva la velouté con una cucharada de nata montada salada (¡aquí se derritió rápidamente al hacer las fotos!), y espolvoree con cebollino fresco picado y trozos de castañas.
La sopa puede servirse con una fina loncha de terrina de foie gras o un trozo de tocino crujiente.
Servir sin demora y comer ruidosamente (o no si se quiere mantener una tapa).
