No hace mucho, probé una sopa en bolsa de una tienda ecológica con setas y avena. El resultado me pareció muy interesante y pensé que sería aún mejor hecho en casa. Lo es, pero lo más importante es que esta receta está lista en 10 minutos. Entre el sabor a cereal de la avena y el sabor a madera de las setas shiitake (que puedes sustituir por setas normales), la sopa es muy reconfortante y tiene una consistencia muy agradable. Una delicia que se repetirá en cuanto llegue el frío.
Receta para 4 personas:
2 cucharadas de aceite de oliva
1 chalota
125 g de setas shiitake
1 litro de caldo de verduras
75 g de avena de cocción rápida (quaker oats)
un poco de perejil finamente picado
sal pimienta
Pelar la chalota y cortar los champiñones en trozos.
Calentar el aceite de oliva en una sartén grande y añadir los trozos de chalota. No importa que estén bien cortados, porque todo se mezcla en menos de 10 minutos.
Añadir las setas shiitake.
Dejar cocer durante 2 minutos, removiendo para evitar que se queme el fondo. Verter el litro de caldo de verduras.
Llevar a ebullición y cocinar durante 2 minutos más. Vierta la harina de avena de una sola vez.
Mezclar y hervir durante 2 minutos.
Añadir un poco de perejil picado y sal y pimienta al gusto.
Mezclar finamente para obtener una consistencia aterciopelada.
