Não há muito tempo, provei uma sopa num saco de uma loja de produtos biológicos com cogumelos e aveia. Achei o resultado muito interessante e pensei que seria ainda melhor artesanal. Está, mas mais importante, esta receita está pronta em 10 minutos. Entre o sabor a cereal da aveia e o sabor a madeira dos cogumelos shiitake (que pode substituir por cogumelos normais), a sopa é muito reconfortante e tem uma consistência muito agradável. Um prazer a ser repetido assim que o tempo frio se instala!
Receita para 4 pessoas:
2 colheres de sopa de azeite de oliva
1 chalota
125g de cogumelos shiitake
1 litro de caldo de vegetais
75g de aveia de cozinha rápida (aveia quaker)
um pouco de salsa finamente picada
sal, pimenta
Descascar a chalota e cortar os cogumelos em pedaços.
Aquecer o azeite numa panela grande e adicionar os pedaços de chalota. Não importa se estão bem cortados, porque tudo é misturado em menos de 10 minutos!
Acrescentar os cogumelos shiitake.
Cozinhar durante 2 minutos, agitando para evitar que o fundo se queime. Verter o litro de caldo de vegetais.
Levar à ebulição e cozinhar durante mais 2 minutos. Verter a farinha de aveia de uma só vez.
Misturar e ferver durante 2 minutos.
Adicionar um pouco de salsa picada e sal e pimenta a gosto.
Misturar finamente para obter uma consistência aveludada.
