Así que volví de Marruecos (ver el viaje culinario AQUÍ) con un montón de recetas y pasteles en mis maletas. Gracias a Touria, Lalla Fatima y Lalla Myriam, a quienes nunca podré agradecer lo suficiente todo lo que me han enseñado, hoy os traigo una nueva receta: hojaldres de almendra. Verás algo increíble: almendras fritas. Me he reído a carcajadas (¡con ganas!) cuando he visto esto, porque parece una locura. Esto es algo habitual y el resultado es delicioso. Por supuesto, puede tostar las almendras en el horno, pero el resultado no será el mismo. Esto da una especie de praliné. Todo ello en un hojaldre muy crujiente y rociado con miel… ¡Ay! Está bien… Muy bien…
Receta de serpentinas de almendra:
-varias hojas de pasta brick (según el tamaño deseado)
-250g de almendras blanqueadas
-125g de azúcar
-1/4 de cucharadita de canela
-15g de mantequilla
-Mantequilla derretida para pincelar las hojas
-Aceite para freír
-un huevo batido para pegar
-Miel (posiblemente con azahar)
Para esta receta, si lo deseas (lo cual me parece una pena), puedes tostar las almendras en lugar de freírlas. Freír almendras puede parecernos un poco sorprendente, pero es delicioso y muy común en el Magreb .
Calentar el aceite en una cacerola a fuego moderado. Se necesita un poco de aceite para cubrir las almendras.
Añadir las almendras sin piel.
Si falta aceite, añadir un poco para cubrir y dejar cocer.
El aceite se calentará bien y las almendras empezarán a freírse.
Esto lleva un poco de tiempo y hay que remover regularmente para evitar que se quemen las almendras. Cuando estén doradas, escúrralas.
A continuación, dejar enfriar sobre papel absorbente.
Mezclar hasta obtener un polvo grueso, añadir el azúcar.
Consejo de Bernard: puede reservar algunas almendras (30 g) para la decoración final.
A continuación, volver a mezclar sólo para obtener una pasta. También puedes (como hicimos nosotros ese día) pasar el relleno por una picadora de carne. Añadir la canela y la mantequilla derretida.

Cortar los bordes de las hojas de pasta brick. Podemos ver aquí la forma que se les da. Unte las hojas con mantequilla derretida. Coloca una hoja al lado de la otra. Puedes poner tres si tienes espacio en casa.
Dar forma al relleno de almendra en un diámetro de 1 a 1,5 cm. Colocar las láminas de pasta brick en la base.
Envolver la salchicha en la lámina.
Untar la parte superior de las láminas con un poco de huevo batido para que se pegue el conjunto al cerrar la salchicha.
Enrollar la salchicha sobre sí misma. y luego cepillar con mantequilla derretida.
Puedes hacer varias bobinas o hacer la primera más grande continuando con el relleno y las hojas de ladrillo. A continuación, basta con unir las dos bobinas grandes empujando un poco la primera bobina dentro de la segunda, y luego continuar la bobina.
Hornear a 180°C durante unos 20 minutos o hasta que las espirales estén doradas. Hay que tener cuidado.
Rocíe con miel caliente después de hornear. No hace falta que te pongas una tonelada. Sólo unas pocas cucharadas.
Espolvorear con almendras trituradas mezclado con un poco de canela.
