Assim, voltei de Marrocos (ver a viagem culinária AQUI) com muitas receitas e bolos nas minhas malas. Graças a Touria, Lalla Fatima e Lalla Myriam, a quem nunca poderei agradecer o suficiente por tudo o que me ensinaram, trago-vos hoje uma nova receita: pastelaria de amêndoa em flocos. Verá algo incrível: amêndoas fritas. Eu desatei a rir (de todo o coração!) quando vi isto, porque parece um pouco louco! Esta é uma ocorrência comum e o resultado é delicioso. É claro que pode brindar as amêndoas no forno, mas o resultado não será o mesmo. Isto dá uma espécie de pralina. Tudo isto numa massa folhada muito crocante e chuviscada com mel. Ai! Está tudo bem… Muito bom mesmo…
Receita para serpentinas de amêndoa:
-folhas de massa de tijolo (dependendo do tamanho desejado)
-250g de amêndoas branqueadas
-125g de açúcar
-1/4 colher de chá de canela
-15g de manteiga
-manteiga derretida para pincelar nas folhas
-frying oil
-um ovo batido para colar
-Honey (possivelmente com flor de laranjeira)
Para esta receita, pode, se assim o desejar (o que considero uma pena), assar as amêndoas em vez de as fritar. A fritura de amêndoas pode parecer-nos um pouco surpreendente, mas é deliciosa e muito comum no Magrebe.
Aquecer óleo numa caçarola em lume moderado. É necessário um pouco de óleo para cobrir as amêndoas.
Adicionar as amêndoas sem a sua pele.
Se faltar óleo, adicionar um pouco para cobrir e deixar cozinhar.
O óleo aquecerá bem e as amêndoas começarão a fritar.
Isto leva algum tempo e é preciso agitar regularmente para evitar queimar as amêndoas. Quando estiverem castanhos dourados, drená-los.
Depois deixar arrefecer em papel absorvente.
Misturar num pó grosseiro, adicionar o açúcar.
Dica de Bernard: pode pôr de lado algumas amêndoas (30g) para a decoração final.
Depois misturar novamente apenas para obter uma pasta. Pode também (como fizemos nesse dia) passar o recheio por um moedor de carne. Adicionar a canela e a manteiga derretida.

Cortar as bordas das folhas de massa de tijolo. Podemos ver aqui a forma que lhes é dada. Pincele as folhas com manteiga derretida. Colocar uma folha ao lado da outra. Pode colocar três se tiver o espaço em casa.
Moldar o recheio de amêndoa num diâmetro de 1 a 1,5cm. Colocar as folhas de massa de tijolo na base.
Embrulhar a salsicha na folha.
Escovar um ovo batido no topo dos lençóis para colar tudo ao fechar a salsicha.
Enrolar a salsicha sobre si mesma. depois pincelar com manteiga derretida.
Pode-se fazer várias bobinas ou fazer a primeira maior, continuando com o recheio e as folhas de tijolo. Depois basta juntar as duas grandes bobinas empurrando um pouco a primeira bobina para a segunda, e depois continuar a bobina.
Cozer a 180°C durante cerca de 20 minutos ou até as bobinas ficarem castanhas douradas. Tem de ter cuidado!
Regar com mel aquecido após a cozedura. Não é preciso pôr uma tonelada! Apenas algumas colheres de sopa.
Polvilhar com amêndoas esmagadas misturado com um pouco de canela.
