Todos conocéis el gazpacho. Ya he publicado una receta para ello (haz clic AQUÍ para leerla). Pero, ¿conoces el salmorejo? ¿Esa otra maravillosa sopa fría andaluza? Es casi lo mismo, pero más sencillo y rápido de preparar. También tiene menos ingredientes, pero no por ello es menos sabrosa. Esta sopa, que se sirve fría, es más espesa y hace cosquillas al paladar con un poco de vinagre de vino. ¡Esta sopa se toma tradicionalmente con huevos duros rotos y algunos trozos de jamón serrano! Con la vuelta del clima cálido, ¡esta receta seguro que será adoptada!
Receta de salmorejo para 4 personas:
-6 tomates maduros
-2 dientes de ajo pequeños (o uno para empezar…)
-2 cucharadas de vinagre blanco
-180 ml de aceite de oliva (puede utilizar menos para su figura, pero esta sopa es rica en aceite de oliva)
-2 o 3 rebanadas de pan de molde sin coste
-sel
-2 huevos duros
-2 lonchas de jamón serrano
Empieza por cocer los huevos duros (10 minutos en agua hirviendo).
Elige unos bonitos tomates para la receta.
Lavar los tomates y quitarles la base.
Poner los tomates (con su piel, ¡sí, sí!) en una batidora. Añade el vinagre.
Aceite de oliva.
Mezclar y añadir el pan remojado en un poco de agua y escurrido.
Volver a batir hasta obtener una sopa espesa. La sal. Pruebe y rectifique la sazón. También se puede añadir ajo o vinagre, pero es también y especialmente la consistencia que cuenta. Esta sopa es realmente espesa.
Cortar el jamón en trozos pequeños.
Así como el huevo duro.
Verter la sopa en los cuencos y espolvorear con huevo duro y jamón.
