Todos conhecem o gaspacho. Já afixei uma receita para ela (clique AQUI para a ler). Mas conhece salmorejo? A outra maravilhosa sopa fria andaluza? É quase a mesma coisa, mas mais simples e mais rápido de preparar. Também tem menos ingredientes mas não é menos saboroso. Esta sopa, servida fria, é mais espessa e faz cócegas nas papilas gustativas com um pouco de vinagre de vinho. Esta sopa é tradicionalmente comida com ovos cozidos quebrados e alguns pedaços de presunto serrano! Com o tempo quente a voltar, esta receita vai certamente ser adoptada!
Receita de “salmorejo” para 4 pessoas:
-6 tomates maduros
-2 pequenos dentes de alho (ou um para começar…)
-2 colheres de sopa de vinagre branco
-180ml de azeite (pode usar menos para a sua figura, mas esta sopa é rica em azeite!)
-2 ou 3 fatias de pão em fatias sem custo
-sel
-2 ovos cozidos duros
-2 fatias de presunto Serrano
Comece por cozinhar os ovos cozidos (10 minutos em água a ferver).
Escolha tomates bonitos para a receita!
Lavar os tomates e remover a base.
Colocar os tomates (com as suas peles, sim sim!) num liquidificador. Acrescentar o vinagre.
Azeite de oliva.
Misturar e adicionar o pão embebido em um pouco de água e espremido.
Misturar novamente até ter uma sopa espessa. Sal. Provar e ajustar o tempero. O alho ou vinagre também pode ser adicionado, mas é também e sobretudo a consistência que conta. Esta sopa é realmente espessa.
Cortar o presunto em pequenos pedaços.
Assim como o ovo cozido.
Verter a sopa para as tigelas e polvilhar com ovo cozido e presunto.
