Aquí tienes una receta muy fresca de ensalada de pasta con verduras al sol. Esta receta es una colaboración con Plaimont (¡para quien ya había escrito dos recetas el otoño pasado!) para ayudarme a descubrir un vino blanco. Soy un fanático de la buena comida, pero también del buen vino. Para un hermoso día de verano, probé el Saint Mont Les Vignes Retrouvées 2017. La ensalada en sí es deliciosa: calabacines amarillos y blancos, aguacate, tomates, algunas bolas de mozzarella y arilos de granada.
ENSALADA DE PASTA FRÍA CON VERDURAS :
Para 4 personas :
400 g de pasta de su elección
3 calabacines muy pequeños, o uno normal
2 tomates
1 abogado
1 calabacín amarillo
1 granada
1 limón
150 g de bolitas de mozarella
algunas semillas de calabaza
aceite de oliva
sal pimienta
Instrucciones:
Me divertí mucho eligiendo los ingredientes de mi mercado. Una hermosa granada, pequeños y deliciosos calabacines blancos, tomates naranjas y un calabacín amarillo.
Al final sólo cogí 3 calabacines. Cortar las puntas y luego cortar en rodajas.
Verter un poco de aceite de oliva en una sartén y calentar a fuego moderado. Coloca los calabacines encima y dóralos ligeramente.
A continuación, córtalas por la mitad a lo largo.
Cocer la pasta al dente en agua hirviendo con sal.
Después de la cocción, enjuáguelas en agua fría y déjelas escurrir. A continuación, rocío con aceite de oliva y mezclo para evitar que se peguen.
Cortar la granada y tomar algunos de los arilos.
Para el calabacín amarillo, puedes simplemente rallarlo o utilizar una especie de sacapuntas de frutas para hacer espaguetis de calabacín.
Poner directamente en la pasta con la ralladura de medio limón.
Mezclar la pasta con el calabacín amarillo. Repartir entre los platos. Añadir los calabacines a la parrilla.
Cortar los tomates y el aguacate en trozos. Añade un poco de zumo de limón a los trozos de aguacate para evitar que se pongan negros.
Dirección al plato. Añadir sal y pimienta al gusto, la mozzarella y los arilos de granada.
Terminar con un poco de aceite de oliva al gusto y algunas semillas de calabaza.
