Volví a Vietnam no hace mucho (ver mi viaje culinario AQUÍ que hice hace dos años) y descubrí estos increíbles rollos de ensalada César en un restaurante que ofrecía «comida fusión». Soy una gran fan de los rollitos de primavera y la idea de meter otro tipo de ensalada, ya hecha y aliñada, en una lámina de arroz me pareció sencillamente genial. No se ensucian los dedos y es muy divertido comerlo. He reproducido la receta tal y como la había probado en Saigón. Aprovecho para daros mi receta de salsa César, con ajo, anchoas, parmesano y zumo de limón. El interior del rollo no es una auténtica ensalada César (donde hay picatostes), sino su interpretación para hacerla lo más deliciosa posible. Con los brotes jóvenes de remolacha y los guisantes, ¡será muy difícil no querer este manjar tan sabroso y fresco!
Receta para 4 personas:
Salsa César casera (sobrará, pero se puede conservar durante 3 días en la nevera)
1 huevo
250g de aceite
2 dientes de ajo
3 cucharaditas de crema de anchoas (30g)
3 cucharadas de zumo de limón
50 g de queso parmesano recién rallado
60 g de nata líquida
pimienta molida
Para 8 a 10 rollos:
De 8 a 10 hojas de arroz de 22 cm de diámetro
1 lechuga batavia (sólo utilizará entre 300 y 350 g)
50g de bacon
2 huevos duros
30 g de queso parmesano rallado
60g de queso rallado
80-90g de salsa César
brotes de remolacha, guisantes, etc.
Para esta receta necesitarás crema de anchoas. Por supuesto, puedes utilizar anchoas y ponerlas directamente en la salsa.
En un recipiente largo y estrecho, verter el huevo entero, los dientes de ajo, el zumo de limón y la crema de anchoas.
Vierta el aceite. Peso el recipiente directamente en la balanza para añadir 250g de aceite.
Con una batidora de inmersión, empezar a emulsionar en el fondo, para triturar los dientes de ajo y la crema de anchoas, y luego subir lentamente la salsa para que se cuaje bien.
¡En unos segundos la salsa está lista! Viértelo en un bol.
Añadir el parmesano recién rallado y la pimienta negra.
Mezclar bien. Está casi listo.
Verter la crema completa y mezclar una última vez.
¡La salsa está lista! ¡Pruébalo, es realmente delicioso!
Para los panecillos, prepárelos lo más tarde posible, ya que la salsa «cocinará» la ensalada. Hay que mezclar todo en el último momento y los rollos se hacen realmente en 5 minutos. Lavar unas cuantas hojas de ensalada, sabiendo que entre 300 y 350 g serán suficientes.
Lavar y secar las hojas y cortarlas en rodajas finas.
Compré tocino ya cocido y crujiente. Está delicioso, pero puedes prescindir de él, o sustituirlo por picatostes o incluso por un poco de pechuga de pollo cocida y enfriada.
Vierta las hojas de ensalada cortadas (300-350 g) en una ensaladera grande. Añade el parmesano rallado y los trozos de bacon.
Poner los 2 huevos duros cortados en trozos.
Y el queso rallado. Totalmente decadente pero realmente irresistible.
Mezclar bien y verter los 80-90g de salsa. Puedes usar más si usas más ensalada. Depende de ti ajustarte.
La ensalada está lista. Pruébalo y ajusta lo que quieras.
Para el resto, compré brotes ya hechos. Da sabor y color.
Sumerja la hoja de arroz completamente en agua caliente durante dos segundos y luego colóquela sobre un paño seco o, mejor aún, sobre ese plato de plástico especial que permite escurrir el exceso de agua.
Verter un poco de brote (en este caso de remolacha) en la mitad inferior de la hoja.
Añade ensalada. Yo utilizo unos alicates para esto, ¡es mucho más fácil!
Viértalo sobre los brotes sin exceso (especialmente al principio si no está acostumbrado a las hojas de arroz).
Enrollar un poco, doblar los lados.
A continuación, termine de enrollar, esta vez muy apretado. Haz lo mismo con todos los rollos.
Puedes ponerlos en la nevera durante una hora antes de servirlos. Ofrézcalos enteros o cortados por la mitad con un poco de pimienta molida. Una delicia.
