عدت إلى فيتنام منذ وقت ليس ببعيد (شاهد رحلتي الغذائية هنا قبل عامين) واكتشفت لفائف سلطة السيزر المذهلة في مطعم يقدم “أطعمة مختلطة”. أنا من المعجبين بشكل غير مشروط لفائف الربيع ووجدت فكرة وضع نوع آخر من السلطة ، جاهزة ومتبلة بالفعل في ورقة أرز ، ببساطة رائعة !! لا تتسخ أصابعك ، ومن الممتع تناول الطعام. أعدت إنتاج الوصفة كما تذوقتها في سايغون. أغتنم هذه الفرصة لأقدم لكم وصفتي لصلصة السيزر مع الثوم والأنشوجة والبارميزان وعصير الليمون. لا يتوافق الجزء الداخلي من اللفة مع سلطة القيصر الأصلية (حيث يوجد خبز محمص) ، ولكن يتوافق مع تفسيرها بحيث تكون لذيذة قدر الإمكان. مع براعم البنجر والبازلاء الصغيرة ، سيكون من الصعب جدًا عدم الرغبة في الحصول على هذه الأطعمة الشهية والطازجة جدًا!
وصفة لأربعة أشخاص:
صلصة سيزر منزلية الصنع (سيكون هناك الكثير! لكنها ستحتفظ بها لمدة 3 أيام في الثلاجة)
1 بيضة
250 جرام زيت
2 فصوص من الثوم
3 ملاعق صغيرة من كريم الأنشوجة (30 جم)
3 ملاعق كبيرة عصير ليمون
50 جرام جبن بارميزان مبشور طازجاً
60 جرام كريمة كاملة
الفلفل الطازج المطحون
من 8 إلى 10 لفات:
من 8 إلى 10 أوراق أرز بقطر 22 سم
1 خس باتافيا (ستستخدم 300 إلى 350 جم فقط)
50 جرام لحم مقدد
2 بيض مسلوق
30 جرام بارميزان مبشور
60 جرام جبن مبشور
80 إلى 90 جرام صوص سيزر
براعم البنجر والبازلاء وما إلى ذلك.
لهذه الوصفة ، ستحتاجين إلى كريم الأنشوجة. يمكنك بالطبع أن تأخذ الأنشوجة التي تضعها مباشرة في الصلصة.
في وعاء طويل ضيق ، اسكب البيضة الكاملة ، فصوص الثوم ، عصير الليمون وكريمة الأنشوجة.
صب الزيت. أزن الحاوية مباشرة على الميزان لإضافة 250 جرام من الزيت.
باستخدام خلاط الغمر ، ابدأ في الاستحلاب من الأسفل لطحن فصوص الثوم وكريمة الأنشوجة ثم اصعد ببطء حتى تأخذ الصلصة جيدًا.
في ثوان ، الصلصة جاهزة! صبها في وعاء.
أضيفي البارميزان المبشور والفلفل الأسود.
اخلط جيدا. إنه جاهز تقريبًا.
يُسكب الكريم الكامل ويُمزج مرة أخيرة.
الصلصة جاهزة! تذوقه ، إنه لذيذ حقًا!
بالنسبة لللفائف ، قم بإعدادها في وقت متأخر قدر الإمكان لأن الصلصة سوف “تطهى” السلطة. لذلك عليك مزج كل شيء في اللحظة الأخيرة ويتم تنفيذ القوائم بالفعل في 5 دقائق. اغسل القليل من أوراق الخس مع العلم أن 300 جرام إلى 350 جرام تكفي.
اغسلي الأوراق وجففيها ثم قطعيها إلى شرائح رفيعة.
اشتريت لحم مقدد مطبوخ ومقرمش بالفعل. إنه لذيذ ولكن يمكنك تركه أو استبداله بقطع الخبز المحمص أو حتى بعض صدور الدجاج المطبوخة والمبردة.
تُسكب أوراق الخس المقطعة (300 إلى 350 جم) في وعاء سلطة كبير. يضاف جبن البارميزان في النشارة ولحم الخنزير المقدد على شكل قطع.
نضع 2 بيضة مسلوقة مقطعة إلى قطع.
والجبن المبشور. منحط تماما ولكن حقا لا يقاوم.
اخلطي جيدًا واسكبي 80 إلى 90 جم من الصلصة. يمكنك وضع المزيد إذا وضعت المزيد من السلطة. الأمر متروك لك للتكيف.
السلطة جاهزة. تذوقها واضبط ما تريد.
بالنسبة للباقي ، اشتريت براعم جاهزة. يعطي نكهة ولون.
انقع ورق الأرز تمامًا لمدة ثانيتين في الماء الساخن ثم ضعه على قطعة قماش جافة ، أو أفضل من هذا الطبق البلاستيكي الخاص الذي يسمح للمياه الزائدة بالتدفق.
صب القليل من البرعم (هنا جذر الشمندر) في النصف السفلي من الورقة.
أضف السلطة. آخذ كماشة لهذا ، إنه أسهل بكثير!
اسكبه فوق البراعم دون فائض (خاصة في البداية إذا لم تكن معتادًا على ورق الأرز).
نشمر قليلاً ، اطوِ الجوانب.
ثم ننتهي من اللف ، وهذه المرة تشديد جيداً. افعل نفس الشيء لجميع القوائم.
يمكنك تبريدهم لمدة ساعة قبل التقديم. قدمها كاملة أو مقطعة إلى نصفين مع القليل من الفلفل المطحون. فرحة!!
