Para la Navidad, he aquí la receta definitiva de unos chocolates muy sencillos pero con una textura y un sabor realmente explosivos. Estas rocas suizas son realmente adictivas. Crujen, se agrietan, se derriten… Además, no se necesita ningún equipamiento especial: ni molde, ni marco, sólo una cuchara sopera y un termómetro. Realmente impresionarán a tus invitados o a los afortunados a los que se los regales.

Recetas de roca suiza:
-300g de barritas de almendra
-120g de jarabe de azúcar de caña
-2 buenas pizcas de sal -30g de mantequilla blanda
-350g de chocolate de cobertura templado (método sencillo AQUÍ)
-4g de manteca de cacao mycryo
Precalentar el horno a 180°C. Poner las almendras en bastones en un bol.
Añadir el jarabe de azúcar de caña y la sal. Para esta receta, utilizo el jarabe Canadou, ¡el jarabe que utilizamos para hacer las macetas!
Mezclar bien.
Colocar todas las almendras en una bandeja de horno forrada con papel de hornear. Poner en el horno a 180°C
Cada 5 minutos, remover las almendras con una cuchara. Al principio, hay jarabe debajo de las almendras: ¡no te asustes! El almíbar acabará evaporándose y las almendras se tostarán muy bien.
No sé el tiempo que tarda, pero a los 15-20 minutos las almendras están bien tostadas y el almíbar ha desaparecido (las almendras están bastante secas).
Echar las almendras en un bol grande y añadir la mantequilla.
Verter el chocolate atemperado (en este caso el chocolate con leche Valrhona).
Remover bien, intentando no meter la cabeza en el bol para comerlo todo (¡tenga paciencia, acabará probándolos y metiéndoselos en la nariz!)
Utilizar una cucharada para formar pequeños montones en el papel de hornear. Hay que ir despacio porque si no la pila se derrumba. También puedes ponerlos en mini moldes de silicona para magdalenas.
Dejar cristalizar durante una o dos horas (depende mucho de la temperatura ambiente). Guardar en un recipiente hermético fuera de la vista.
