Vierte 3 cucharadas de aceite de oliva en una cacerola grande. Caliéntalo a fuego moderado y añade la cebolla, las chalotas y los dientes de ajo, todo pelado y cortado en trozos.
Pela y pica un trozo de jengibre y añádelo a la sartén.
Deja que se dore bien. Mientras tanto, enjuaga las lentejas coral bajo un chorrito de agua fría en un colador. Añádelas a la sartén.
Vierte el litro y medio de agua y los 400 g de tomates en conserva enteros (con su jugo).
Cuece durante 15 minutos a fuego moderado desde que rompa a hervir.
Añade las especias: comino, curry amarillo en polvo y guindilla. Añade sal y pimienta. Vierta la leche de coco. Triturar la mezcla con una batidora de mano.
No dudes en añadir cilantro fresco, lavado y picado grueso. Puedes remezclar un poco.
Sirve la sopa bien caliente. Si lo recalientas al día siguiente, añade un poco de agua para volver a extenderlo.
