Versez 3 cuillerées à soupe d’huile d’olive dans une grande casserole. Mettez à chauffer sur feu modéré, puis ajoutez l’oignon, les échalotes, les gousses d’ail, le tout épluché et coupé en morceaux.
Épluchez un morceau de gingembre, coupez-le en morceaux et ajoutez-le dans la casserole.
Laissez bien dorer le tout. Pendant ce temps, rincez les lentilles corail sous un filet d’eau froide dans un tamis. Ajoutez-les dans la casserole.
Versez directement le litre et demi d’eau et les 400g de tomates entières en boite (avec le jus).
Mettez à cuire 15 minutes sur feu modéré à partir de l’ébullition.
Ajoutez les épices : cumin, curry jaune en poudre et le piment. Salez et poivrez. Versez le lait de coco. Mixez le tout avec un mixeur plongeant.
N’hésitez pas à ajouter de la coriandre fraiche, lavée et grossièrement hachée. Vous pouvez remixer un petit coup.
Servez la soupe bien chaude. Si vous la réchauffez le lendemain, remettez-y un peu d’eau pour la re-détendre.
