Con o sin hueso… ¡Ese es el eterno dilema de los clafoutis! Si vas al Limousin y dices que vas a hacer un clafoutis con cerezas sin hueso, ¡no voy a dar mucho de tu piel! Por eso te ofrezco la versión clásica de este postre, con la masa base y cerezas enteras. Pero después de experimentar con o sin huesos, puedo decirles que, personalmente, no cambia el sabor. Parece que el hueso, mientras se cocina, deja el sabor, pero nadie ha notado la diferencia… Y sí, lo reconozco, prefiero un clafoutis sin hueso, que es más fácil de degustar. Así que también os dejo mi receta de clafoutis, menos tradicionales claro. ¡Por lo tanto, tendrá la opción y les pido a los puristas que me dejen comer sin tener que escupir mis huesos!
