¡Aquí está la receta de los canelés (sí, solo hay una N!) y todo lo que necesitas saber para que sean un éxito perfecto. La receta es un poco larga de leer pero es el resultado de muchas pruebas. Todas las dificultades que encontré han sido resueltas. Aquí está mi receta que mantuve en secreto durante mucho tiempo. ¡Pero todos mis secretos están aquí! Los canelés bordeleses son, como su nombre indica, bordeleses. Y si se hacen en moldes acanalados es por su nombre original (canaules) y no al revés como todo el mundo piensa! El canaule era una especie de pan elaborado con yemas de huevo, que cayó en el olvido en el siglo XIX y fue actualizado a principios del siglo XX por un pastelero que le añadió ron y vainilla. Dado el nombre de la masa, la hornea en un molde acanalado. No fue hasta 1985 que la segunda “N” desapareció de la palabra canelé para convertirse en canelé!
