Aqui está a receita dos canelés (sim, há apenas um N!) e tudo o que precisa de saber para os fazer perfeitamente! A receita é um pouco longa de ler, mas é o resultado de muitas tentativas. Todas as dificuldades que encontrei foram resolvidas. Aqui está a minha receita, que mantive em segredo durante muito tempo. Mas todos os meus segredos estão aqui! Os canelés de Bordeaux são, como o seu nome indica, de Bordeaux. E se são feitos em moldes estriados, é por causa do seu nome original (cânulas) e não o contrário, como todos pensam! O canaule era uma espécie de pão com gemas de ovo, esquecido no século XIX e ressuscitado no início do século XX por um pasteleiro que acrescentou rum e baunilha. Dado o nome da pastelaria, cozeu-a em forma de fofo. Foi apenas em 1985 que o segundo "N" desapareceu da palavra "canelé" para se tornar canelé!
