Fishmas.fr se puso en contacto conmigo para hacer esta receta de bacalao. Tuve la suerte de ser invitada a Islandia en 2017 para un viaje gastronómico (que puedes ver AQUÍ) y descubrí el circuito de producción de este pescado de los mares fríos del norte de Europa y, por tanto, más concretamente de este hermoso país. Así que os ofrezco esta receta que me sugirieron y enseguida salivé. Sugiero un bacalao a la sartén, dorado, con un puré casero, brócoli asado al horno con aceite de oliva (una delicia), pero sobre todo una divina salsa holandesa, ¡bien de limón! También le invito a visitar el sitio web fishmas.frEl bacalao islandés se puede encontrar en todos los supermercados y grandes superficies.A título informativo, el sector islandés utiliza dos certificaciones para garantizar la pesca sostenible, Pesca Responsable de Islandia:- Basado en las directrices de la FAO (Organización de las Naciones Unidas para la Agricultura y la Alimentación), el Sistema de Certificación de Gestión de la Pesca Responsable de Islandia es un modelo de certificación de terceros cuya función es dar fe de la gestión responsable de los pescadores en aguas islandesas y del respeto a los recursos marinos. El MSC (Marine Stewardship Council) es un programa internacional de certificación cuyo objetivo es garantizar la sostenibilidad de las poblaciones de peces, minimizar el impacto de la pesca en el medio ambiente y promover una gestión eficaz de la pesca. El MSC ha certificado más especies en aguas islandesas que el programa IRF. En total, 15 especies están certificadas, incluido el pez lobo (Loup de Mer), que forma parte de la campaña Fishmas.
