Fui contactado por fishmas.fr para fazer esta receita de bacalhau. Tive a sorte de ser convidado para uma viagem culinária à Islândia em 2017 (que podem ver AQUI) e descobri o circuito de produção deste peixe dos mares frios do norte da Europa e, portanto, mais especificamente deste belo país. Assim, ofereço-vos esta receita que me foi sugerida e salivei imediatamente. Sugiro um bacalhau frito, dourado, com um puré caseiro, brócolos grelhados no forno com azeite (uma delícia), mas acima de tudo um molho hollandaise divino, bem limonado! Também o convido a visitar o website fishmas.frO bacalhau islandês pode ser encontrado em todos os supermercados e supermercados.Para informação, a indústria islandesa utiliza duas certificações para assegurar uma pesca sustentável, a Islândia Pesca Responsável:- Com base nas directrizes da FAO (Organização das Nações Unidas para a Alimentação e Agricultura), o Esquema de Certificação de Gestão Responsável das Pescas da Islândia é um modelo de certificação de terceiros cuja função é atestar a gestão responsável dos pescadores nas águas islandesas e o respeito pelos recursos marinhos. O MSC (Marine Stewardship Council) é um programa internacional de certificação que visa assegurar a sustentabilidade das populações de peixes, minimizar o impacto da pesca no ambiente e promover uma gestão eficaz da pesca. O MSC certificou mais espécies em águas islandesas do que o programa IRF. No total, 15 espécies são certificadas, incluindo o lobo (Loup de Mer) que faz parte da campanha de Fishmas.
