Voy a empezar a hacer quiches de nuevo, ya que son realmente sencillas de hacer y los resultados son inmediatos y sabrosos. Además, suele ser espectacular, ya que si lo haces en un aro de mousse (¡más alto que un aro de tarta!) en lugar de en una tartera, ¡parecerá una quiche de alta gama! Esta quiche de salmón ahumado y espinacas hará las delicias de todos, ya sea caliente, templada o fría. Seguirá teniendo mejor sabor cuando el hojaldre esté todavía crujiente al salir del horno.
Receta de una quiche de salmón y espinacas:
-1 hojaldre (la receta «casera», haga clic AQUÍ) -500g de espinacas -300g de salmón ahumado -400g de nata líquida -4 huevos -pimienta, sal -40g de mantequilla salada -1 cucharada de aceite de oliva
Lavar cuidadosamente las hojas de espinacas. Lleno mi fregadero con agua, lavo bien las hojas y luego las enjuago.
Quitar el nervio central de las hojas. Exprimir bien (en un centrifugador de ensalada).
Poner el aceite de oliva y la mantequilla en una sartén y cocinar las espinacas. Las espinacas estarán suficientemente cocidas cuando casi no tengan agua.
Mientras tanto, preparar la migaine: mezclar los huevos y la nata (en la foto hay 5 huevos, pero para 400g de nata, se necesitan 4 huevos).
Añadir sal (no demasiada, ya que el salmón también es salado) y pimienta.
Añadir las espinacas escurridas.
Mezclar bien.
Cortar el salmón ahumado en trozos.
A continuación, añádelo a la mezcla de espinacas.
Forrar un aro de espuma de 20 cm de diámetro y 4,5 cm de alto (para una quiche gruesa) con la masa. Puedes cambiar el círculo o hacerlo en un molde clásico.
Rellenar con espinacas y crema de salmón.
Hornear a 190°C durante 40 minutos, vigilando a los 30 minutos. ¡Tienes que adaptar la cocción a tu propio horno! La quiche apenas debe tambalearse en el centro.
Decántalo con cuidado y disfrútalo caliente o frío con una ensalada.
