No hace mucho, me invitaron a cenar a casa de una de mis amigas de toda la vida (casi 20 años), Joëlle, que preparó este pudin de tapioca y leche de coco para la cena. Como verdadero amante del arroz con leche y de todo lo que se le parezca, ¡estaba encantado! Con un coulis de fresas por encima, era realmente perfecto y fresco. Simplemente añadí un poco de vainilla y ralladura de lima para darle sabor. También puse un poco de gelatina en mi coulis de fresa apenas cocido, lo que le da al postre una textura especial, sobre todo gracias a la tapioca. Para hacer cuando llega el calor, ¡para un postre original y fresco! Así que un gran agradecimiento a Joëlle por compartir su deliciosa receta.
Receta de pudín de tapioca para 4 personas:
-100 ml de leche semidesnatada -400ml de leche de coco (el líquido) -1/2 vaina de vainilla -75g de tapioca -55g de vergeoise rubia o azúcar moreno -la cáscara de una lima sin tratar
Para el coulis de gelatina: -125g de fresas -40g de vergeoise rubia -30ml de agua -1 hoja de gelatina
Es la tapioca de supermercado que se encuentra en Francia. No es lo mismo que la tapioca brasileña. De hecho, sigue siendo yuca, pero en una forma diferente. El almidón de tapioca que utilizo para el Pao de queijo es de la misma planta.
Mezclar la tapioca con la vergeoise.
Añadir el interior de media vaina de vainilla.
Remover un poco para dispersar la vainillina.
Poner la vaina de vainilla vaciada en la leche con la leche de coco en un cazo a fuego lento. Llevar a fuego lento.
Vierta el tazón de azúcar-apioca-vainilla de una sola vez.
Remover sin parar. Deje que pasen 6-7 minutos desde la cocción a fuego lento, sin dejar de remover.
Tendrás el pudín…
Retirar del fuego y rallar la lima.
Mezclar una última vez y verter en 4 moldes.
Preparar el coulis de gelatina: cortar las fresas en cuartos y ponerlas en un cazo con la vergeoise.
Remover y llevar a ebullición a fuego lento, luego contar 4 minutos.
Esto le da tiempo a remojar su hoja de gelatina en agua fría.
Cuando las fresas se hayan cocinado durante 4 minutos, añada el agua (los 30 ml o g) y luego la hoja de gelatina blanda. Mezclar bien fuera del fuego.
Verter sobre los budines.
Coloque los budines en el frigorífico durante al menos 3 horas antes de disfrutarlos bien frescos.
