El «Pudim de leite» (pronunciado «poudjim dji léïtche») es una especialidad que se sirve en todo Brasil como postre. Parece un flan de caramelo, pero la preparación es más que sencilla y el resultado es sorprendente. La consistencia del pudim de leite es firme y suave al mismo tiempo. Esta receta se basa en la leche condensada azucarada, lo que afecta en gran medida el sabor y la textura final. Hay un regusto a mermelada de leche. ¡Una cucharada de esta maravilla y es amor a primera vista!
Receta de pudim de leite:
-5 huevos
-2 latas de leche condensada azucarada (397 g cada una)
-la misma cantidad de leche semidesnatada que de leche condensada
150g de azúcar
Precalentar el horno a 180°C.
Poner el azúcar en un cazo con un poco de agua (30g) y llevar a ebullición.
El azúcar debe caramelizarse y tener un bonito color ámbar.
Cuando el caramelo esté listo, viértelo en un molde (con un agujero en el centro, ¡será la mejor tradición!).
Preparar la crema: verter las dos latas de leche condensada en una batidora.
Llenar los dos botes vacíos con leche semidesnatada y verterla en la batidora. la misma cantidad de leche condensada azucarada y de leche semidesnatada.
Añadir los 5 huevos.
Encienda la batidora durante 1 minuto para mezclar bien.
Verter en el molde sobre el caramelo. Colocar la sartén en una fuente apta para el horno y llenar la fuente con agua hirviendo. El molde debe estar al menos medio sumergido.
Cubrir con papel de aluminio e introducir en el horno a 180°C.
Hornear durante 1h15-1h30. La crema debe cuajar y agitarse muy ligeramente en el centro. También es suficiente para clavar un cuchillo. Debe salir limpio.
Dejar enfriar completamente y luego meter en la nevera durante tres horas. Justo antes de servir, llene el fregadero con agua muy caliente y sumerja el molde durante 10 segundos.
Derramar el pudim de leite en una fuente de servir… ¡Está listo!
¡El pudim de leite es tan suave, firme y fundente al mismo tiempo!
