Pudim de leite” (pronuncia-se “poudjim dji léïtche”) é uma especialidade que é servida em todo o Brasil como sobremesa. Parece um creme de caramelo, mas a preparação é mais do que simples, e o resultado é espantoso. A consistência do pudim de leite é firme e suave ao mesmo tempo. Esta receita baseia-se em leite condensado adoçado, o que afecta grandemente o sabor e textura finais. Há um sabor residual de doce de leite. Uma colher desta maravilha e é amor à primeira vista!
Receita de pudim de leite:
-5 ovos
-2 latas de leite condensado adoçado (397g cada)
– a mesma quantidade de leite meio-gordo que o leite condensado adoçado
150g de açúcar
Pré-aquecer o forno a 180°C.
Colocar o açúcar numa panela com um pouco de água (30g) e levar ao lume.
O açúcar deve caramelizar e ter uma bela cor âmbar.
Quando o caramelo estiver pronto, despeje-o num molde (com um buraco no meio, será a melhor tradição!).
Preparar as natas: verter as duas latas de leite condensado adocicado num liquidificador.
Encher as duas latas vazias com leite semi-desnatado e verter para o misturador. a mesma quantidade de leite condensado açucarado e leite meio-gordo.
Acrescentar os 5 ovos.
Ligar o misturador durante 1 minuto para misturar bem.
Verter para o molde sobre o caramelo. Colocar a panela num prato à prova de forno e encher o prato com água a ferver. O molde deve estar pelo menos meio imerso.
Cobrir com folha de alumínio e colocar no forno a 180°C.
Cozer durante 1h15-1h30. O creme deve assentar e abanar muito ligeiramente no centro. É também suficiente enfiar uma faca. Deve sair limpo.
Deixar arrefecer completamente e depois colocar no frigorífico durante três horas. Pouco antes de servir, encher a pia com água muito quente e mergulhar o molde nela durante 10 segundos.
Entornar o pudim de leite numa travessa… Está pronto!
O pudim de leite é tão suave, firme e derretido ao mesmo tempo!
