Llevo mucho tiempo soñando con volver a hacerlo. Con mi blog de cocina, ya ni siquiera busco una excusa para hacer buena comida en casa. ¡Es casi un deber! Bromas aparte, soy un auténtico fan de los profiteroles, con la sublime salsa de chocolate, la col fresca y el helado de vainilla. Una mezcla de texturas y sabores, es una explosión en el plato, sobre todo cuando los profiteroles se acompañan de almendras laminadas tostadas y una salsera de chocolate caliente…
Receta de profiteroles:
Media receta de pasta choux (receta AQUÍ, con la mitad de ingredientes)
Masa crujiente:
115g de azúcar moreno
115g de harina
120 g de mantequilla blanda a temperatura ambiente
115g de chocolate negro (no demasiado fuerte o enmascarará la vainilla del helado)
30 g de nata líquida
65g de agua caliente
Almendras tostadas
Para la masa crujiente:
Poner la harina y el azúcar moreno en un bol grande.
Añadir la mantequilla a temperatura ambiente.
Amasar la mezcla hasta que la mantequilla esté totalmente incorporada.
Extienda la masa lo más fina posible entre dos hojas de papel de horno. Pasar la mezcla a una bandeja de horno y enfriar.
Prepara la pasta choux como explico AQUÍ con sólo la mitad de los ingredientes. ¡También puedes optar por hacer la receta completa para hacer la otra mitad como chouquette! Utilizar una manga pastelera (punta de 8 mm) para dar forma a los choux.
Cortar la masa con un pequeño círculo de 2 o 3 cm de diámetro.
Colocar la masa crujiente sobre cada col.
Hornear a 190°C durante 15 a 20 minutos. Deben estar rellenos y dorados.
Preparar la salsa de chocolate: poner el chocolate negro con la nata líquida en el microondas durante 1 minuto o al baño María.
Derretir bien el chocolate.
Añadir poco a poco el agua caliente sin dejar de remover.
La salsa se vuelve grumosa y luego, mágicamente, se vuelve muy suave y brillante: ¡está lista!
Abra su choux por la mitad y cubra con una bola de helado de vainilla. Yo lo hice desde cero con la receta que os pongo AQUÍ.
Permitir 3 coles por persona.
En el último momento, vierta la salsa de chocolate caliente y espolvoree las almendras tostadas. ¡Servir sin demora con la salsa de chocolate para los más exigentes !
