Há tanto tempo que sonho em voltar a fazê-lo! Com o meu blogue culinário, já nem sequer procuro uma desculpa para fazer boa comida em casa. É quase um dever! Brincadeira à parte, sou um verdadeiro fã dos profiteroles, com o sublime molho de chocolate, couve fresca e gelado de baunilha. Uma mistura de texturas e sabores, é uma explosão no seu prato, especialmente quando os profiteroles são acompanhados por amêndoas tostadas em flocos e um molho de chocolate quente…
Receita para profiteroles:
Meia receita de massa de choux (receita AQUI, com metade dos ingredientes)
115g de chocolate negro (não muito forte ou irá mascarar a baunilha no gelado)
30g de creme completo
65g de água quente
Amêndoas torradas e fendidas
Para a massa estaladiça:
Colocar a farinha e o açúcar mascavado numa tigela grande.
Acrescentar a manteiga à temperatura ambiente.
Amassar a mistura até que a manteiga esteja totalmente incorporada.
Espalhar a massa tão fina quanto possível entre duas folhas de papel vegetal. Transferir a mistura para um tabuleiro de assar e refrigerar.
Preparar a massa de choux enquanto eu explico AQUI com apenas metade dos ingredientes. Também pode optar por fazer a receita completa para fazer a outra metade como uma chouquette! Use um saco de tubagem (ponta de 8mm) para moldar o seu choux.
Cortar a massa com um pequeno círculo de 2 ou 3 cm de diâmetro.
Colocar a massa estaladiça em cada repolho.
Cozer a 190°C durante 15 a 20 minutos. Deveriam ser gordurosos e castanhos dourados.
Prepare o seu molho de chocolate: coloque o chocolate preto com o creme completo no microondas durante 1 minuto ou em banho-maria.
Derreter bem o chocolate.
Adicionar gradualmente a água quente enquanto se mexe.
O molho torna-se grumoso e depois magicamente torna-se muito suave e brilhante: está pronto!
Abra o seu choux ao meio e encha com uma bola de gelado de baunilha. Fi-lo do zero com a receita que lhe dou AQUI.
Permitir 3 couves por pessoa.
No último momento, verter sobre o molho de chocolate quente e polvilhar com as amêndoas tostadas. Sirva sem demora com o molho de chocolate para os mais exigentes !
