Llevo mucho tiempo hablando de ello, así que aquí está mi receta de bombones rosas. Me he esforzado por presentarles los pralinés tal y como se elaboran realmente en la región de Lyon. Dado el nada despreciable precio de estas diabluras, será mucho más barato hacerlas uno mismo. Puedes conservarlos en una caja hermética durante mucho tiempo. Lo único: para conseguir los verdaderos pralinés rosas, hay que añadir el azúcar en tres veces (a no ser que tengas una cuba de pralinés giratoria). No es nada complicado, ni lleva tanto tiempo como parece. Lo encuentro bastante divertido y relajante: hay que mezclar cosas y se te ocurren mil cosas… Un poco de tiempo en el horno para que se sequen bien y estarán listas para ser utilizadas en muchas recetas.
Receta para 750 g de bombones rosas:
-125g de avellanas -125g de almendras -450g de azúcar -Tinte rojo
Poner un tercio del azúcar, 150g, en una cacerola grande con un poco de agua (para empaparla) y unas gotas de colorante rojo. También puedes utilizar tinte en polvo, para ello necesitarás la punta de un cuchillo.
Mezclar bien y llevar a ebullición a fuego bastante alto.
Cuando aparezcan grandes burbujas, añadir las almendras y las avellanas.
Remover constantemente. Bajar el fuego un poco si es necesario.
Al cabo de un rato, el jarabe empezará a cristalizar, el conjunto se enarenará.
Mezclar siempre para que el azúcar cubra bien los frutos secos.
Por un lado tienes la fruta deshidratada y por el otro el azúcar que no se pega, es como el azúcar rosa en polvo. Dejar que se derrita parcialmente para que se pegue a las avellanas y a las almendras.
Colocar en una bandeja de horno forrada con papel de hornear.
Clasificar los frutos secos y poner todo el azúcar restante (el que no está pegado) en una cacerola con 150g de azúcar extra.
Añadir un poco de colorante rojo y agua. Llevar a fuego lento hasta que los terrones de azúcar se hayan derretido.
Volver a poner los frutos secos en la sartén. No enciendas el fuego debajo de él todavía. En primer lugar, llevar a ebullición el almíbar hasta que alcance los 124°C.
Cuando el almíbar se acerque a los 124°C, se puede encender el fuego bajo la sartén.
Cuando el almíbar esté a la temperatura adecuada, viértalo sobre los frutos secos sin dejar de remover.
Rebozarlos bien con el almíbar, que volverá a lijar como antes.
Deja que el azúcar que no se quiere pegar se derrita un poco.
Retirar a un papel y volver a clasificar: los pralinés por un lado, el azúcar que no se pegue por el otro.
Volver a poner el azúcar rosa con los 150 g de azúcar restantes en un cazo con el colorante y el agua. Dejar que se derrita y luego calentar a 124°C. Colocar los pralinés en la sartén y, sin dejar de remover, añadir el almíbar a la temperatura adecuada.
Con esta tercera operación, el almíbar cubrirá ahora los pralinés rosas.
Mezclar, dejar que el jarabe cubra.
Deje que el azúcar terco se derrita un poco.
Verter en un papel. Normalmente, apenas queda azúcar que no se quiera pegar.
Última operación: poner los bombones en el horno a 70°C durante 45 minutos para que se sequen bien. Luego puede conservarlos durante mucho tiempo en una caja hermética para disfrutarlos tal cual, o utilizarlos en fabulosas recetas futuras…
