Há muito tempo que falo sobre isso, por isso aqui está a minha receita de chocolates rosa. Tenho-me esforçado por vos apresentar as pralinas tal como são realmente feitas na região de Lyon. Dado o preço não negligenciável destas pequenas coisas diabólicas, será muito mais barato fazê-las você mesmo. Pode mantê-los numa caixa hermética durante muito tempo. A única coisa: para obter as verdadeiras pralinas cor-de-rosa, é preciso adicionar o açúcar em três vezes (a menos que se tenha uma cuba de pralina rotativa). Não é de todo complicado, nem tão demorado como parece. Acho bastante divertido e relaxante: é preciso misturar as coisas e pode-se pensar em mil coisas… Um pouco de tempo no forno para os secar bem e estarão prontos para serem utilizados em muitas receitas!
Receita para 750g de chocolates rosa:
-125g de avelãs -125g de amêndoas -450g de açúcar – corante vermelho
Colocar um terço do açúcar, 150g, numa panela grande com um pouco de água (para o embeber) e algumas gotas de coloração vermelha. Também pode usar corante em pó, precisará da ponta de uma faca.
Misturar bem e deixar ferver em lume bastante alto.
Quando aparecem grandes bolhas, adicionar as amêndoas e as avelãs.
Mexer constantemente. Baixar um pouco o calor, se necessário.
Passado algum tempo, o xarope começará a cristalizar, tudo isto irá lixar.
Misture sempre de modo a que o açúcar cubra bem os frutos secos.
De um lado tem o fruto seco e do outro tem açúcar que não cola, é como o açúcar em pó cor-de-rosa. Deixá-lo derreter parcialmente de modo a aderir às avelãs e amêndoas.
Colocar sobre um tabuleiro forrado com papel vegetal.
Ordenar os frutos secos e colocar todo o açúcar restante (o açúcar não colado) numa frigideira com 150g de açúcar extra.
Acrescentar um pouco de corante vermelho e água. Deixar em lume brando até que os cubos de açúcar tenham derretido todos.
Devolver os frutos secos à panela. Não acender ainda o fogo debaixo dela. Primeiro, levar o xarope a ferver até atingir 124°C.
Quando o xarope se aproxima dos 124°C, pode-se acender o fogo debaixo da panela.
Quando a calda estiver à temperatura certa, despejá-la sobre os frutos secos enquanto se mexe.
Revesti-las bem com o xarope, que voltará a lixar como antes.
Deixar o açúcar que não quer colar derreter um pouco.
Retirar para um pedaço de papel, depois separar novamente: as pralinas de um lado, o açúcar que não cola do outro.
Colocar o açúcar rosa com os restantes 150g de açúcar de volta numa panela com a coloração e água. Deixá-lo derreter e depois aquecer a 124°C. Colocar as pralinas na panela, depois, enquanto se mexe, adicionar o xarope à temperatura certa.
Com esta terceira operação, o xarope irá agora revestir as pralinas cor-de-rosa.
Misturar, deixar a camada de xarope.
Deixar o açúcar teimoso derreter um pouco.
Verter sobre um papel. Normalmente, quase não resta açúcar que não queira colar.
Última operação: colocar os chocolates no forno a 70°C durante 45 minutos para os secar bem. Pode então guardá-los durante muito tempo numa caixa hermética para os desfrutar como estão, ou utilizá-los em receitas fabulosas que virão…
