Hace poco estuve en el Périgord y descubrí muchas especialidades a base de frutos secos. Menos mal que me vuelve loco. Os presento los pralinés de nueces que se pueden comer tal cual, o utilizar en la composición de recetas que os voy a proponer rápidamente. Se conservan durante mucho tiempo. Muy fáciles de hacer, también puedes ofrecerlos en un bonito paquete. Verás que tendrán mucho éxito…
Receta para 500 g de pralinés de nueces:
-300g de nueces en grano -200g de azúcar
Elija los granos de las nueces para que sean lo más bonitos posible.
Verter el azúcar en una cacerola grande con un poco de agua para que se empape y remover con una cuchara. Calentar a fuego moderado.
Cuando las burbujas se espesen, añadir las nueces.
Remover para cubrir bien con el jarabe espeso.
Sin dejar de remover, calentar hasta que el jarabe se cristalice. Se secará.
Asegúrese de que las nueces estén bien cubiertas con el azúcar granulado.
Seguir mezclando para evitar que se quemen las nueces. Calentar hasta que una fina capa de caramelo cubra los frutos secos. No debe derretirse todo el azúcar, sólo una capa muy fina.
Cuando esté hecho, viértalo en un papel de horno de buena calidad o en un tapete de silicona. Deje que las nueces se enfríen.
En cuanto se hayan enfriado, ponlos en una caja hermética. Se pueden conservar durante mucho tiempo, a la espera de utilizarlas en una receta o de comerlas tal cual.
