Fui ao Périgord não há muito tempo e descobri muitas especialidades à base de nozes. Ainda bem que sou louco por isso! Apresento-vos as nozes pralinas que podem ser comidas tal como são, ou utilizadas na composição de receitas que vos vou propor muito rapidamente. Vão manter-se por muito tempo. Muito fácil de fazer, pode também oferecê-los num belo pacote. Verá que terão muito sucesso…
Receita para 500g de pralinas de nozes:
-300g de grãos de nozes -200g de açúcar
Escolha os seus grãos de nozes para que sejam tão bonitos quanto possível.
Verter o açúcar numa panela grande com um pouco de água apenas para o molhar e mexer com uma colher. Calor sobre calor moderado.
Quando as bolhas engrossarem, adicionar as nozes.
Mexer para revestir bem com o xarope grosso.
Enquanto ainda se mexe, o calor até a calda se cristalizar. Vai secar.
Certifique-se de que as nozes estão bem revestidas com o açúcar granulado.
Continuar a misturar para evitar queimar as nozes. Aquecer até que uma fina camada de caramelo cubra as nozes. Nem todo o açúcar deve derreter, apenas uma camada muito fina.
Quando estiver pronto, verter sobre um papel vegetal ou tapete de silicone de boa qualidade. Deixar as nozes arrefecer.
Assim que tiverem arrefecido, coloque-os numa caixa hermética. Podem ser guardadas por muito tempo, enquanto se espera para as utilizar numa receita ou para as comer como estão!
