Es difícil ver la diferencia en las fotos entre todos los platos chinos que publico en Internet. Sin embargo, la receta del «pollo kung pao» es mi favorita de las recetas chinas de mi sitio web. Lo descubrí por primera vez en Chicago y luego por todo Estados Unidos antes de encontrarlo definitivamente en China. Por una vez uso pechugas de pollo en esta receta en lugar de la pechuga de pollo que suelo usar. Simplemente porque esta receta se cocina rápidamente y las claras quedan blandas.
Receta de «pollo kung pao» para 2-3 personas:
-4 o 5 muslos de pollo sin piel
-1 cucharadita de aceite de sésamo tostado
-2 dientes de ajo
-5cm de jengibre fresco
-6 o 7 chiles secos
-1 cucharadita de vino chino (de la cocina)
-1 cucharada de salsa de soja ligera
-1 cucharada de salsa teriyaki (si no, utilice 1/2 cucharadita de azúcar y 1/2 cucharadita de salsa de soja)
-3 cucharadas de salsa de ciruelas
-3 cucharadas de salsa de ostras
-1 cucharadita de almidón de maíz
-3 cucharadas de agua
-un buen puñado de cacahuetes tostados sin sal
3-4 cebollinos chinos
-Aceite para freír
Empieza preparando la salsa con la salsa de soja, la salsa de ostras, la salsa teriyaki, el vino chino y la salsa de ciruela mezclados en un bol y la harina de maíz y el agua en otro.
Pelar los ajos y picarlos finamente.
Aquí tienes una imagen de cómo pelar ajos aplastándolos bajo la hoja de un cuchillo. Esto se hace en cuestión de segundos.
También se puede pelar el jengibre con una cuchara de forma muy sencilla.
A continuación, picar el ajo y el jengibre juntos.
También cortar el pollo. El objetivo es preparar todo con antelación antes de cocinar, ya que se cocina rápidamente.
Poner 2 ó 3 cucharadas de aceite en un wok y ponerlo a fuego fuerte.
Cuando el aceite esté caliente, añadir las guindillas secas.
Retirarlas cuando empiecen a estar bien coloreadas. ¡Pero deja el aceite!
Añadir dos cucharadas de la mezcla de ajo y jengibre picados a este aceite de chile.
Cuando el ajo y el jengibre empiecen a estar fragantes, añadir las pechugas de pollo.
No te olvides de cortar la cebolla china. ¡Bastan los trozos de madera!
Añade la salsa de soja/aceite/teriyaki/ciruela cuando el pollo empiece a cocinarse por todos los lados.
Mezclar bien y añadir la mezcla de agua y maizena.
Por último, los cacahuetes y la cebolleta y el aceite de sésamo.
Para terminar, añada 2 ó 3 guindillas secas (¡pero no las que ya están fritas!). Sírvelo inmediatamente.
