من الصعب رؤية الفرق في الصور بين جميع الأطباق الصينية التي أضعها على الإنترنت. وصفة “دجاج كونغ باو” مع ذلك الوصفة المفضلة لدي من الوصفات الصينية التي أقدمها لكم على موقعي. لقد اكتشفته لأول مرة في شيكاغو ثم في كل الولايات المتحدة قبل أن أجده للأبد في الصين! لمرة واحدة أضع صدور الدجاج هذه بدلاً من الأفخاذ التي أفضلها كثيرًا. ببساطة لأن هذه الوصفة تطهى بسرعة ويبقى البيض طريين.
وصفة “دجاج كونغ باو” لشخصين أو ثلاثة:
-4 أو 5 أفخاذ دجاج منزوعة الجلد
-1 ملعقة صغيرة زيت سمسم محمص
-2 فصوص من الثوم
– 5 سم من الزنجبيل الطازج
-6 أو 7 فلفل مجفف
-1 ملعقة صغيرة من النبيذ الصيني (للطبخ)
-1 ملعقة كبيرة من صلصة الصويا الخفيفة
-1 ملعقة كبيرة من صلصة الترياكي (وإلا ضعي نصف ملعقة صغيرة من السكر ونصف ملعقة صغيرة من صلصة الصويا)
– 3 ملاعق كبيرة من صلصة البرقوق
-3 ملاعق كبيرة من صلصة المحار
-1 ملعقة صغيرة نشا ذرة
-3 ملاعق كبيرة من الماء
– حفنة جيدة من الفول السوداني المحمص غير المملح
-3 أو 4 ثوم المعمر الصيني
– زيت القلي
ابدأ بتحضير الصلصة مع صلصة الصويا وصلصة المحار وصلصة الترياكي ، النبيذ الصيني و يتم خلط صلصة البرقوق في وعاء ونشا الذرة والماء في وعاء آخر.
يقشر الثوم ويقطع ناعما.
إليكم صورًا لطريقة تقشير الثوم بسحقه تحت نصل السكين. يتم ذلك في ثوان!
يمكنك أيضا تقشير الزنجبيل بالملعقة بكل بساطة !!
ثم يقطع الثوم والزنجبيل معًا.
قطع الدجاج أيضا. الهدف هو تحضير كل شيء مقدمًا قبل الطهي لأن الطهي سريع!
ضعي 2 أو 3 ملاعق كبيرة من الزيت في مقلاة وضعيها على نار عالية.
عندما يسخن الزيت ، أضيفي الفلفل المجفف.
أخرجهم عندما يبدأون في التحول إلى اللون البني. لكن دع الزيت !!
أضف ملعقتين كبيرتين من خليط الثوم / الزنجبيل المفروم إلى هذا الزيت الحار.
عندما يبدأ الثوم والزنجبيل كن عطرا ، أضف صدور الدجاج.
لا تنس أن تقطع البصل الأخضر الصيني. القطع الخشنة تكفي!
أضف صلصة الصويا / المحار / الترياكي / البرقوق عندما يبدأ الدجاج في النضج من جميع الجوانب!
اخلطي جيداً وأضيفي خليط الماء / دقيق الذرة.
ثم ننهي الفول السوداني والبصل الأخضر وزيت السمسم.
أنهِ الأمر بإضافة 2 أو 3 فلفل مجفف (لكن ليس تلك التي سبق قليها!). قدميها على الفور!
