No es realmente una receta china, sino más bien una inspiración de allí. Ciertamente recuerda al cerdo agridulce, y aunque las papilas gustativas se vuelven locas con este plato, el sabor es realmente diferente. Quería adaptar mi receta de buñuelos crujientes perfectamente (ver buñuelos de camarones AQUÍ), con pollo en una salsa agridulce de naranja. Como de costumbre, este lo hice un poco sobre la marcha hasta conseguir el sabor deseado, cuidando de pesar todo antes y después para asegurarme de poder reproducir la salsa. Los trozos de pollo se mantienen perfectamente crujientes incluso cuando se bañan en la salsa (al menos 15-20 minutos), ¡pero le garantizo que no queda ni una sola miga!
Receta de pollo crujiente a la naranja:
-6 muslos de pollo
La masa para freír: -100g de harina -225 g de harina de arroz (o harina de maíz) -320g de agua -5g de sal -1 paquete de levadura en polvo
Salsa agridulce con naranja: -4 cucharadas de aceite -4 dientes de ajo -6 cm de jengibre fresco -120g de vinagre blanco -500g de zumo de naranja -25g de salsa de soja clara -200g de azúcar -sel -20g de harina de maíz diluida en un vaso pequeño de agua fría -semillas de sésamo doradas para espolvorear sobre los buñuelos
Comience por preparar los muslos. Retirar la piel y deshuesarlas.
Hay que tener cuidado de que no queden restos de cartílago.
Cortar el pollo en trozos.
Preparar la masa de los donuts:
Añadir la harina, la harina de arroz (o la harina de maíz), la sal, la levadura y el agua. Mezclar bien para obtener una pasta sin grumos.
Añadir el pollo y mezclar bien.
Calentar una sartén con aceite. Cuando el aceite esté caliente, añadir los trozos de pollo, bien cubiertos con la pasta.
Sólo se deben poner unos pocos trozos a la vez.
Dejar que se cocinen durante 2 o 3 minutos. Los donuts se cocinan en dos tandas (la segunda cuando se prepara la salsa) para que queden perfectamente crujientes. Cocer todos los trozos una vez y dejarlos escurrir sobre papel absorbente.
Mientras el pollo se enfría, calienta un wok.
Preparar la salsa: añadir el aceite y el ajo y el jengibre picados.
Dejar cocer hasta que esté bien coloreado.
Añade el vinagre. ¡Cuidado con la nariz! Desbloquea los senos paranasales.
Añadir el zumo de naranja y el azúcar.
Salsa de soja.
La cáscara de una naranja.
Dejar que la salsa se reduzca un poco.
Cuando la salsa aún se esté cocinando, devuelva los buñuelos a la freidora para su baño final. ¡Esta vez tendrán que colorear!
Añadir la harina de maíz diluida en un vaso pequeño de agua.
La salsa espesará rápidamente. Por lo tanto, es necesario mezclar bien. Añade los buñuelos mientras se cocinan.
Mezclar bien para cubrir los trozos de pollo. ¡Está listo!
Servir inmediatamente con arroz blanco. Estos buñuelos permanecen crujientes incluso después de 20 minutos en su salsa. Pero no después… ¡Así que hay que comer de todo! El consejo de Bernard: puedes espolvorear semillas de sésamo doradas por encima. No lo hice porque no tenía más a mano. ¡Pero será aún más apetecible!
