ليست وصفة صينية حقًا ، بل مصدر إلهام من هناك. إنه بالتأكيد يذكر لحم الخنزير الحلو والحامض وعلى الرغم من أن براعم التذوق تصاب بالجنون مع هذا الطبق ، إلا أن الطعم مختلف بالتأكيد. أردت يتكيف وصفة الدونات المثالية مقرمش (انظر هنا فطائر الجمبري) ، مع الدجاج في صلصة البرتقال الحلو والحامض. كالعادة ، صنعت هذا بشكل عشوائي حتى حصلت على المذاق المطلوب ، مع الحرص على وزن كل شيء قبل وبعد للتأكد من أنني أستطيع إعادة إنتاج الصلصة. قطع دجاج تظل مقرمشة تمامًا حتى عند الاستحمام في الصلصة (15-20 دقيقة على الأقل) ولكني أضمن لك أنه ربما لن يتبقى فتات!
وصفة الدجاج المقرمش بالبرتقال:
-6 أفخاذ دجاج
خليط القلي: – 100 جرام طحين -225 جرام من دقيق الأرز (أو نشا الذرة) -320 جرام ماء – 5 جرام ملح – 1 علبة من البيكينغ باودر
صلصة البرتقال الحلو والحامض: -4 ملاعق كبيرة زيت -4 فص ثوم -6 سم من الزنجبيل الطازج – 120 جرام خل أبيض -500 جرام عصير برتقال -25 جرام صلصة صويا خفيفة – 200 جرام سكر -ملح – 20 غ من نشا الذرة مخففة في كوب صغير من الماء البارد – سمسم ذهبي يرش على الكعك
ابدأ بتحضير الفخذين. قم بإزالة الجلد ثم نزعها.
عليك التأكد من عدم ترك أي غضروف.
نقطع الدجاج إلى قطع.
تحضير خليط الدونات:
نضيف الدقيق ودقيق الأرز (أو نشا الذرة) والملح والخميرة والماء. تخلط جيدا للحصول على عجينة بدون كتل.
نضيف الدجاج ونخلط جيدا.
ضعي مقلاة زيت على النار. عندما يصبح الزيت ساخناً جداً نضيف قطع الدجاج المغطاة بالخليط جيداً.
أضف بضع قطع فقط في كل مرة.
دعهم يطبخون لمدة 2 أو 3 دقائق. سنقوم بطهي الكعك مرتين (المرة الثانية عند تحضير الصلصة) للحصول على مقرمشة مثالية. لذا قم بطهي جميع القطع لأول مرة واتركها تجف على ورق ماص.
بينما يبرد الدجاج ، ضعي مقلاة على النار.
نحضر الصلصة: نضيف الزيت ثم الثوم المفروم والزنجبيل.
اطبخي حتى تحصلي على لون جميل.
أضف الخل. احترس من الخياشيم! يفك انسداد الجيوب !!
أضف عصير البرتقال والسكر.
صلصة الصويا.
نكهة البرتقال.
دع الصلصة تقلل قليلاً.
عندما تستمر الصلصة في النضج ، ضعي الكعك المقلي مرة أخرى للاستحمام الأخير. هذه المرة سوف يضطرون إلى التلوين!
أضف نشا الذرة المخفف في كوب صغير من الماء.
سوف تتكاثف الصلصة بسرعة. لذلك عليك أن تخلط جيدا. أضف الكعك أثناء طهيه.
تخلط جيدا حتى تغلف قطع الدجاج جيدا. انه جاهز!!
قدميها مباشرة مع الأرز الأبيض. تبقى هذه الكعك مقرمشًا حتى بعد 20 دقيقة في الصلصة. ولكن بعد لا … لذلك عليك أن تأكل كل شيء !! نصيحة برنارد: يمكنك رش بذور السمسم الذهبية. لم أفعل ذلك لأنه لم يكن لدي المزيد في متناول اليد. لكنها ستظل كذلك أكثر فاتح للشهية!
