Como probablemente ya sepas, ¡soy un loco de todo lo que se resquebraja! Hoy comparto con vosotros mi receta de galletas de almendra y café. Parecen macarrones o galletas fallidas, pero no, son huecos y terriblemente crujientes con grandes trozos de almendras tostadas. Y son tan fáciles de hacer… En dos minutos la masa está lista y son perfectas para la hora del café o para acompañar un sorbete o un helado.
Receta de crujientes de café y avellanas:
-150g de almendras con piel -250g de azúcar glas -35g de clara de huevo -1 cucharada de extracto de café líquido
Poner las almendras en una batidora y molerlas bastante gruesas.
Colóquelos en un bol grande y añada el azúcar glas, el extracto de café líquido y los 35 g de clara de huevo (¡la clara de un huevo grande!).
Mezclar bien: ¡está listo!
En una bandeja de horno forrada con papel de hornear, colocar 6 tats formados con una cucharilla.
Introducir en el horno precalentado a 180°C y hornear de 12 a 15 minutos. Deben hincharse, agrietarse y no moverse. ¡Parecen galletas, pero son huecas y muy crujientes!
