¡Esta es una tarta de influencia muy americana que me hace desear temperaturas más frescas! No hay nada mejor que acurrucarse en casa con una taza de café, té o chocolate caliente y un trozo de un gran pastel picante. En un sofá blando, es aún mejor. Sólo con la cocina se te hace la boca agua. Toda la casa está envuelta en el dulce aroma de la canela y el jengibre. Es rico, claro, pero este pastel es para compartirlo con los amigos…
Receta de pastel para un molde cuadrado de 22 cm:
Crumble de especias de avena :
110g de harina
30 g de harina de avena molida gruesa
90g de azúcar
1 cucharadita de canela en polvo
1/2 cucharadita de jengibre en polvo
100 g de mantequilla semisalada
Masa para tartas :
125 g de azúcar de caña integral
90g de azúcar en polvo
2 huevos
250 g de nata líquida
95g de aceite de colza
260 g de harina
1/4 de cucharadita de sal
1/4 de cucharadita de polvo de hornear
1 cucharadita de bicarbonato de sodio
170 g de nueces de macadamia
Preparar el crumble de avena y especias. Coloque la harina, la avena, el azúcar y las especias en un bol o en el bol de su robot de cocina.
Añadir la mantequilla cortada en trozos.
Remover con la hoja o con la punta de los dedos para que se incorpore bien.
Debería tener una pasta homogénea. Dejar de lado.
Para la masa, en el mismo bol (limpiado rápidamente), verter los azúcares, los huevos, la nata y el aceite.
Mezclar hasta obtener una crema suave.
Mezclar la harina, la sal, la levadura en polvo y el bicarbonato.
Verter la mezcla en la masa.
Mezclar bien para obtener una pasta suave.
Vierta la mitad de la mezcla en el molde forrado con papel de hornear.
Poner la mitad de la masa de crumble rota en trozos.
Vierta el resto de la masa por encima, seguido de las nueces de macadamia y el resto de la masa de crumble.
Hornear a 170°C durante 45 minutos.
Deje que se enfríe antes de cortarlo en rodajas para un reconfortante tentempié.
