El pastel de azúcar es una de las muchas especialidades de Quebec. Sin embargo, se pueden encontrar otras versiones del pastel de azúcar en el norte de Francia y en Bélgica. La masa es crujiente con un interior rico, suave y dulce… Nata, vergeoise marrón (que nuestros amigos de Quebec llaman azúcar moreno) y ¡eso es casi todo! Una auténtica delicia, sobre todo cuando empieza a hacer frío.
Receta de pastel de azúcar de Quebec:
Masa dulce:
– 210g de harina
-125g de mantequilla blanda fría en trozos
-25g de polvo de almendras
-50g huevo batido
-1 pizca de sal
-35 g de azúcar glas
Crema de azúcar:
-300g de vergeoise marrón
-250 g de nata al 35% (o 125 g de nata clásica al 30% y 125 g de nata Isigny al 40%)
-60g de leche
-60g de harina
Preparar la masa dulce:
Poner la almendra molida, el azúcar glas, la harina, la sal y la mantequilla troceada en el bol de la amasadora.
Lijar la mezcla para incorporar la mantequilla con la «k» del robot de cocina. O a mano.
Añadir el huevo batido con antelación y mezclar sólo para incorporarlo, ¡pero no más!
Coloque una bola de masa en papel pergamino y coloque una segunda hoja de papel sobre ella. Unta con el rodillo sin agregar harina, todo queda limpio!!
Forrar un círculo de tarta de 18 cm de diámetro y 2,5 cm de altura.
Y cortar el exceso de masa.
Para la crema de azúcar, poner la harina y la vergeoise marrón en una sartén.
Mezclar y añadir la leche y la nata.
Precalentar el horno a 180°C.
Poner la nata con el azúcar en un cazo a fuego lento y remover constantemente con un batidor, con cuidado de que no se queme el fondo.
Cuando la crema hierva (se espesará) retírala del fuego.
Y verter sobre la base de pastelería dulce cruda.
Poner en el horno durante 30 minutos, vigilando la cocción y adaptándose a su propio horno…
La tarta debe estar dorada por el borde de la masa.
El pastel se desinflará entonces. Dejar enfriar pero no refrigerar.
Disfrute de la tarta a temperatura ambiente tal cual… Es un verdadero pecado, pero es tan bueno.
