A torta de açúcar é uma das muitas especialidades do Québec. Contudo, outras versões da tarte de açúcar podem ser encontradas no norte de França e na Bélgica. A massa é estaladiça com um interior rico, macio e doce. Creme, vergeoise castanha (a que os nossos amigos do Quebeque chamam açúcar castanho) e é quase tudo! Um verdadeiro deleite, especialmente quando começa a ficar frio!
Receita de torta de açúcar do Quebeque:
Massa doce:
– 210g de farinha
-125g de manteiga mole fria em pedaços
-25g de pó de amêndoa
-50g de ovo batido
-1 pitada de sal
-35g de açúcar de confeiteiro
Creme de açúcar:
-300g de vergeoise castanha
-250g de 35% de creme (ou 125g de creme clássico 30% e 125g de creme Isigny 40%)
-60g de leite
-60g de farinha
Preparar a massa doce:
Colocar a amêndoa em pó, o açúcar em pó, a farinha, o sal e a manteiga na tigela da batedeira.
Misturar a mistura para incorporar a manteiga com o “k” do processador de alimentos. Ou à mão!
Adicione o ovo batido com antecedência e misture apenas para o incorporar, mas não mais!
Colocar uma bola de massa sobre um pedaço de papel vegetal e colocar um segundo pedaço de papel em cima dele. Espalhe com o rolo sem adicionar farinha, tudo fica limpo!
Linha um diâmetro de 18cm e círculo de tarte de 2,5cm de altura.
E cortar o excesso de massa.
Para o creme de açúcar, colocar a farinha e a vergeoise castanha numa frigideira.
Misturar e adicionar o leite e as natas.
Pré-aquecer o forno a 180°C.
Colocar o creme com o açúcar numa caçarola em lume brando e mexer constantemente com um batedor, tendo o cuidado de não deixar queimar o fundo.
Quando o creme ferve (vai engrossar), retira-o do calor.
E verter sobre a base de pastelaria crua e doce.
Coloque no forno durante 30 minutos, observando a cozedura e adaptando-se ao seu próprio forno…
A tarte deve ser castanha dourada à volta da borda da massa.
A tarte esvaziará então. Deixar arrefecer mas não colocar no frigorífico!
Desfrute da torta à temperatura ambiente como está… É um verdadeiro pecado, mas é tão bom!
