Como hace muy buen tiempo y no quiero pasar horas en la cocina, hago ensaladas rápidas, pero que no carecen de sabor ni de buenos productos. Hoy, pasta con pesto y tomates secos. Una sabrosa combinación con los tomates tiernos y la pasta «al dente». Hice la receta como una ensalada fría que es ideal para un picnic. Se puede hacer exactamente lo mismo en un plato caliente. Un gran agradecimiento a Peter y Peggy que hicieron esta receta para nuestro soleado picnic, que volví a hacer al día siguiente. Una delicia.
Receta de pasta con pesto (para 4 a 6 personas):
-500g de pasta cocida «al dente» (para la pasta casera, vaya AQUÍ)
-60g de queso parmesano
-60g de piñones
-60g de aceite de oliva
-1 diente de ajo (o un poco más)
-1 manojo pequeño de albahaca fresca
-Tomates secos
¡Prepara tus ingredientes! ¡La cocina ya huele bien! Si quieres hacer tu propia pasta, la receta está AQUÍ.
Poner los piñones, el ajo y el aceite de oliva en una batidora pequeña. Se podría utilizar un poco más de ajo, pero a mí me gusta que el pesto sea bastante ligero, sobre todo cuando hago la versión de ensalada fría.
Bata a alta velocidad y añada el parmesano y la albahaca.
Mezclar hasta obtener una pasta suave.
Cocina tu pasta favorita, ¡aquí hago una ensalada fría con pasta al dente!
Para la ensalada fría, enjuague la pasta cocida bajo el agua fría. Añadir el pesto.
Para los tomates secos, hiérvalos durante 10 minutos. Si no se cocinan, serán muy difíciles de masticar.
Nota: Aquí he hecho las cosas por separado, pero puedes cocer los tomates secos en agua hirviendo con la pasta. Esto le ahorrará tiempo.
