Como o tempo está muito bom e eu não quero passar horas na cozinha, faço saladas rápidas, mas não lhes falta sabor nem bons produtos. Hoje em dia, massa com pesto e tomate seco. Uma combinação saborosa com os tomates tenros e a massa “al dente”. Fiz a receita como uma salada fria que é ideal para um piquenique. Pode fazer exactamente a mesma coisa num prato quente. Um grande obrigado a Peter e Peggy que fizeram esta receita para o nosso piquenique ensolarado, que eu fiz novamente no dia seguinte! Uma delícia.
Receita para massas com pesto (serve 4 a 6):
-500g de massa cozida “al dente” (para massa caseira, vá AQUI)
-60g de queijo parmesão
-60g de pinhões
-60g de azeite
-1 dente de alho (ou um pouco mais)
-1 pequeno molho de manjericão fresco
-tomates secos
Prepare os seus ingredientes! A cozinha já cheira bem! Se quiser fazer a sua própria massa, a receita é AQUI.
Colocar os pinhões, o alho e o azeite numa pequena batedeira. Podia-se usar um pouco mais de alho, mas gosto que o pesto seja bastante leve, especialmente quando faço a versão de salada fria.
Misturar em alta velocidade e depois adicionar o parmesão e o manjericão.
Misturar até obter uma pasta macia e agradável.
Cozinhe a sua massa favorita, aqui faço uma salada fria com massa al dente!
Para a salada fria, lavar a sua massa cozinhada em água fria. Acrescentar o pesto.
Para os tomates secos, fervê-los durante 10 minutos. Se não cozinharem, serão muito difíceis de mastigar!
Nota: Aqui fiz coisas separadamente, mas pode cozinhar os seus tomates secos em água a ferver com a massa! Isto irá poupar-lhe tempo.
