Esta paleta de cordero muy tierna se sirve con una salsa cremosa de mascarpone y dientes de ajo confitados con romero fresco. Se puede servir con patatas, ya sea cocinadas en el mismo plato o por separado, salteadas con ajo fresco y hierbas.
Receta de «Paleta de cordero con crema de ajo» para 4 a 6 personas:
-1 paleta de cordero deshuesada (guárdela para cocinarla, pero por separado)
-2 cabezas de ajo + 1 diente (para las patatas)
-5 ramitas de romero fresco
-250 g de mascarpone
-Aceite de oliva
-Sal, pimienta recién molida
-2 kg de patatas
Precalentar el horno a 160°C.
Comienza pinchando la carne por todas partes con un cuchillo.
En una batidora pequeña, ponga las hojas de 2 ó 3 ramitas de romero (escaldadas en agua en ), sal y una buena cucharada de aceite de oliva.
Masajear la carne con este preparado para que toda la carne y los agujeros queden cubiertos por esta «salsa».
Poner la paleta (yo pongo los huesos debajo de la carne para que sepan mejor) en una fuente de horno con los dientes de una cabeza de ajo, con sus pieles. Coge las hojas de otra ramita de romero y espárcelas en el plato.
Cortar sólo la parte superior de la segunda cabeza de ajo . Poner la segunda cabeza de ajos entera en un papel de aluminio con hojas de romero (aún lavadas), una cucharada de aceite de oliva y sal. Cerrar en papel de aluminio.
Coloque este envoltorio en el plato.
Poner en el horno a 160°C durante 1h30. Si quieres añadir patatas, puedes ponerlas en la fuente (peladas y cortadas en trozos) después de esta hora y media.
También puedes cocinar las patatas por separado en un wok grande (me parece más práctico porque los woks tienen una gran capacidad y puedes dorar 2 kg de una vez) con aceite de oliva y sal. Las pongo crudas y las salteo directamente, primero con tapa y luego sin ella, removiendo regularmente. Puedes añadir un diente de ajo machacado y unas hojas de romero y una o dos chalotas.
A continuación, aumentar el horno a 180°C y hornear durante otra hora u hora y media.
Justo antes de servir, retire el papillote del plato.
Retire la carne de la cabeza de ajo (es decir, sin la piel) junto con las hojas de romero y colóquelas en una cacerola.
Añadir los 250 g de mascarpone y calentar a fuego lento.
En cuanto la crema hierve, se apaga el fuego y se sirve sobre la carne con las patatas.
