هذا الكتف الرقيق جدًا من لحم الضأن مصحوب بصلصة الماسكاربوني الكريمية وكونتفت فصوص الثوم مع إكليل الجبل الطازج. يمكن تقديمه مع البطاطس ، مطبوخة في نفس الطبق أو منفصلة ، مقلي بالثوم الطازج والأعشاب الطازجة.
وصفة “كتف الضأن مع كريمة الثوم” تكفي من 4 إلى 6 أشخاص:
-1 كتف خروف مخلية من العظم (نحتفظ بها للطبخ ، لكن منفصلة)
-2 رأس ثوم + 1 فص (للبطاطس)
– 5 أغصان من إكليل الجبل الطازج
-250 جرام مسكربون
-زيت الزيتون
– ملح وفلفل مطحون
-2 كجم من البطاطس
سخني الفرن إلى 160 درجة مئوية.
ابدأ بوخز اللحم على كامل سطحه بسكين.
في خلاط صغير ، ضعي أوراق 2 أو 3 فروع من إكليل الجبل (مرت مع الماء) والملح وملعقة جيدة من زيت الزيتون.
قم بتدليك اللحم بهذا المستحضر بحيث يتم تغطية جميع اللحوم والثقوب بهذه “الصلصة”.
نضع الكتف (أضع العظام تحت اللحم لمنحهم المزيد من النكهة) في طبق للخبز مع فصوص من الثوم مع قشورهم. اجمع أوراق غصن آخر من إكليل الجبل وانثرها في الطبق.
فقط قص الجزء العلوي من الثانية بصلة من الثوم. ضعي الرأس الثاني من الثوم في ورق ألومنيوم مع أوراق إكليل الجبل (ما زالت مغسولة) وملعقة كبيرة من زيت الزيتون والملح. أغلق في احباط.
ضع هذه الحليمة في الطبق.
توضع في الفرن على حرارة 160 درجة مئوية لمدة ساعة ونصف. إذا أردت إضافة البطاطس ، يمكنك وضعها بعد هذه الساعة ونصف في الطبق (مقشر ومقطع إلى قطع).
وإلا يمكنك طهي البطاطس بشكل منفصل في مقلاة كبيرة (أجدها أكثر عملية لأن المقالي ذات سعة كبيرة ويمكنك تحمير 2 كجم دفعة واحدة!) بزيت الزيتون والملح. أضعها نيئة وأقليها مباشرة ، بغطاء أولاً ثم بدونها ، مع التحريك بانتظام. يمكنك إضافة فص من الثوم المهروس وعدد قليل من أوراق إكليل الجبل وواحد أو اثنين من الكراث.
ثم نرفع الفرن إلى 180 درجة مئوية ونخبز مرة أخرى لمدة ساعة إلى ساعة ونصف.
قبل التقديم مباشرة ، قم بإزالة ورق القصدير من الطبق.
اجمع لحم رأس الثوم (لذلك بدون قشر) مع أوراق إكليل الجبل وضعها في قدر.
أضيفي 250 جم من الماسكاربوني وسخنيها على نار خفيفة.
بمجرد أن تغلي الكريمة ، أطفئي النار وقدميها فوق اللحم مع البطاطس.
